I make dishes that I can store in small containers and freeze so when I am too tired to cook or know I don't feel like making anything for dinner I will take out one of these serving size frozen leftovers and put it in the fridge to thaw overnight. I will usually make a small spinach salad to go with the homemade frozen meal. One of my favorites that I make a head of time and freeze in serving size container is a low fat mostaccioli with ground turkey breast instead of ground beef. It is really simple and delicious. Just brown the ground turkey breast with a dice onion, then add a large jar of spaghetti sauce. Boil the noodles and then put the two together. It is easy and it tastes amazing and it is low fat. I will then scoop small portions out and put them in small containers to be frozen.

It is tough to not eat out when you travel. I try to pack some foods when we travel but I find we do eat out at least once and then try to just enjoy it and think of it as a treat.

It's hard to not eat out especially when you're busy with a job. I know a lot of people use their crockpots or if at home, start dinner early in the day. I think that's how we made do in the old days...just start early. :)

Just discovered this website. It will be one of my favorites. Thanks!
