Make grab-and-go breakfasts

Getting kids to eat breakfast before school can sometimes be a challenge. There are days when everyone is running late or maybe they simply don’t have an appetite when they first wake up. Grab-n-go breakfasts are a good way to get them to eat something while they’re in the car or waiting for the bus, so they don’t have to go to school on an empty stomach. You can make breakfast burritos, pancakes (spread peanut butter on them and roll them up) or egg and English muffins breakfast sandwiches ahead of time. Or have foods such as fruit, yogurt and granola handy.
One reader, Palooka from Pennsylvania, shares: “Melt 1 cup of peanut butter in a pan, then pour in a little maple syrup (about 1/2 cup or to your taste) and 2 cups of cereal, such as Cheerios or Rice Krispies, and mix. You can add chocolate chips or raisins, too. Roll the mixture into balls or put it in a pan in the fridge until firm and cut as needed.”

Breakfast cookies:

I like these right out of the freezer, but you can also eat at room temperature or warm them in the microwave:
1 stick melted butter
2 eggs
2 teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoons baking soda
1-3/4 cups honey
4 cups oats
4 cups wheat flour
2 cups chocolate chips (could also use dried fruit)
I combine everything except the chocolate chips in my mixer, then I fold in the chocolate chips. I use a cookie scoop to put them on the tray. Bake for 15-20 minutes at 350 degrees F. Fills two gallon-size freezer bags. Enjoy! — Tina H., Washington

Cord labels:

We all receive those free return address labels. There are always way too many to use. With a roll of double-sided Scotch tape and a pair of scissors, you can use the labels to keep track of your electronic devices and their cords. Cellphones: I cut out the same cute picture from three labels, put one on the back of the phone, one on the AC charger and one on the car charger. Use the double-sided Scotch tape and they will stay on for years. — Jack A., email

My DIY foamy soap dispenser:

I hate the tacky, cheapo plastic dispenser foamy soap comes in, but I didn’t want to spend the money to get a nicer dispenser. I had some plastic lids that fit Mason jars and a vintage blue glass pint jar. I cut a hole in the lid, cut the threaded portion of the cheapo soap dispenser off, screwed that into the hole in the new lid, attached the pump, put in the soap and water mixture, screwed on the new lid assembly, and PRESTO: a cool new dispenser. I like that it’s a lot heavier than the plastic one and stays in place better. And I can mix up at least twice as much at once, so I won’t have to refill it as often. It didn’t cost me a dime, compared with buying one for $25. Now I’m going to keep my eyes open for a suitable container to make one for the bathroom, too, and I’m going to watch for a sale on the cheapo soap and dispenser so I can get another pump. — S.D., Minnesota

Toaster oven cooking:

I use toaster oven for anything and everything I can. It keeps the heat out of the house, which means less electricity usage for both the stove and the air conditioning. I’ve used it for the last three years for anything that I can fit in it. In fact, I just got done baking zucchini with tomato and mozzarella, topped with bacon bits and breadcrumbs. You can get rotisserie toaster ovens that will cook whole chickens, small turkeys, etc. They’re slightly bigger than regular toaster ovens, but not so big you couldn’t have it on a decent-sized counter.
I’ve found that if I have to dig out my toaster oven, put stuff back, then go through the same to put it away every time I want to use it, I just won’t do it. So I leave mine out. — Niko, Florida

Great use for leftover beef:

Beef Hash Patties
2 cups leftover roast beef
2 cups fresh boiled potatoes
1 tablespoon shortening
1/4 cup chopped onions
1/4 teaspoon pepper
Chop the beef in a food chopper, using medium blade. Place the freshly boiled potatoes in a bowl and chop as fine as meat. Melt shortening in a small frying pan and saute onions until slightly browned. Combine chopped meat, potatoes, onions, salt and pepper; mix thoroughly. Form into cakes and brown in lightly greased frying pan. — Olivia J., Florida
