I still would like help. My sister got married in August...real quick wedding before BIL left for Iraq. It was in my Moms backyard quite lovely. Well they are gonna have a wedding or just reception after next August when he gets back. Anyways I am going to make her a recipe book with old family faves and new found ones..now. I was wondering if anyone has any tried and true recipes they would like/be willing to share? I am also going to do the "Apology Goblet" I saw in the old posts

90 minute rolls

2 -2 1/2 cups flour

1/2 tsp. salt

2 Tbsp sugar

1 pkg or 1 Tbsp yeast ( I use 1 Tbsp)

3/4 cup milk

2 Tbsp butter

Mix most of the flour with the salt, sugar and yeast. Melt butter over medium heat. Add milk and heat until very warm, 120 - 130 degrees. Add to flour mixture and beat 2 minutes on medium speed. Add the rest of the flour and beat for 2 minutes on high. Stir in enough flour to make a stiff, but not hard dough. You just want it to be no longer sticky. Knead for 2-3 minutes. Oil a bowl well. Place dough in oiled bowl and turn over, making sure both sides are coated. Let rise 15 minutes or until about double in size. It's ready when you poke it quickly with your finger and the dent remains.

Divide dough into 12 pieces for rolls or shape into a loaf. Brush with oil and let rise to double. While dough is rising, preheat oven to 375 degrees. You can place the pan on the oven while the dough is rising. The warmth will help it rise.

Bake at 375 degrees for 20 - 25 minutes. Brushing melted butter a couple of times during the last 10 minutes of baking will give you a softer, buttery crust. I even brush it a few more times while it's cooling. It makes the crust taste amazing!

Remove from pan and allow to cool for 10 - 15 minutes before cutting to keep it from crumbling. An electric knife will give you more even slices.

** A loaf of bread is done when it is golden brown and sounds hollow when you thump it.

** If you have a Kitchen Aid mixer with a dough hook, it is wonderful for making bread! Simply add enough flour and let it knead until the dough clings to the hook and cleans the dough from the sides of the mixing bowl.

** This recipe can be used to make cinnamon rolls and pocket sandwhiches, too.

This is NOT a frugal recipe but it is a real crowd pleaser.

Bacon Cocktail Weenies

1 pkg of cocktail sausages

1lb bacon, cut into thirds

1lb brown sugar

1 pkg round toothpicks

Liberally spray a 9 x 13 cake pan with nonstick spray. This will help with messy clean up later.

Wrap pieces of bacon around cocktail sausages and secure with toothpicks. Crowd into pan, leaving a corner open for basting. Sprinkle brown sugar over the top of the weenies, covering completely but making sure there are no hard little lumps of sugar.

Place into 375 degree oven. Cook until brown sugar is melted and bacon is comepletely cooked. This will take from 30-45 minutes. Be sure to baste weenies in the melted sugar and bacon grease while cooking, breaking up any lumps of sugar.

When serving, be sure to drizzle some of the sugar/bacon grease over the weenies.

*** All flavors of bacon can be used for this recipe. I have used maple flavored with success.

Beer Bread


3 cups self rising flour (or add 3 tsp baking powder and 1 tsp salt to all purpose)

1/4 cup sugar

12 oz beer

1/2 cup melted butter


Preheat oven to 375 degrees and grease loaf pan.

Mix the dry ingredients, add the beer. Mix and pour or spoon into loaf pan. Sometimes batter will be very thick.

Pour melted butter over the batter and bake for 1 hour.

Remove from pan and cool for 15 minutes before cutting.

This makes a bread with thick, crispy crust and goes very well with hearty soups and stews. An electric knife is ideal for slicing this bread.

Pancakes

2 eggs

2 cups flour

2 Tbsp sugar

5 tsp baking powder

1/4 tsp salt

1 1/2 cups milk

2 eggs

1/4 cup vegetable oil


Mix dry ingredients and set aside. Beat eggs slightly, then add oil and milk. Add wet ingredients to the dry ingredients and stir just enough to moisten the dry ingredients. Mixture will be lumpy.

Heat a lightly greased griddle or frying pan to medium heat. Spoon 1/4 to 1/3 cup of batter onto griddle. Flip when the edges of the pancake look dry and the bubbles in the middle begin to break. Cook until golden.

Pie or turnover crust

3 cups flour

1 tsp salt

1 cup shortening

1/2 - 3/4 cup ice water


Mix flour with salt. Add shortening in chunks and cut or rub into flour until it resembles cornmeal. Add enough water to moisten dough and toss with fork until dough follows fork around the bowl. DO NOT OVERMIX!

The key to tender and flaky piecrust is not to overhandle it. You want to mix it just enough to make it hold together.

Bake at 375 degrees until golden.

This recipe makes enough for a 2 crust pie or a small 2 crust cobbler, depending on how thick you like your crust. Roll out leftover crust, spread with butter, liberally sprinkle with cinnamon sugar, cut into small squares and bake with your pie until golden. My family likes these piecrust cookies as much, and maybe even better than pie.

Chewy popcorn balls

1 cup unpopped popcorn

1/4 cup butter

1 cup mini marshmallows

1 lb powdered sugar

3/4 cup corn syrup

2 Tbsp water


Pop popcorn, preferably in air popper, and place in very large bowl or pan.

Put all other ingredients in saucepan and cook over medium heat until mixture comes to a roiling boil.

Pour over popcorn, butter hands well and shape into balls. Be sure to keep hands very well buttered because this is very sticky!

*** If you would like a salty/sweet combo, salt your popcorn after popping. Delicious.

Saltine Candy aka Mock Toffee aka Welfare Candy


1 cup butter ( do NOT use margarine!)

1 cup brown sugar

1 (11oz) pkg chocolate chips (white chocolate chips work, too)

40 saltine crackers

1 cup chopped nuts, your preference (optional, but very good)


Line a jellyroll pan with aluminum foil and spray with nonstick spray. Lay crackers flat on foil in a single layer. Preaheat oven to 350 degrees.

Melt butter and sugar together over medium heat and cook until foamy. Pour over crackers and bake for 10 minutes.

Remove from oven and sprinkle with chocolate chips. After a couple of minutes, the chocolate chips will be soft enough to spread.

Sprinkle with nuts and allow to cool. Refrigerate to harden. Cut into squares or break into pieces like peanut brittle.

Heloise's Cake Mix Cookies


1 (18oz) box cake mix, any flavor, unprepared

1/2 cup vegetable oil

2 large eggs


Preheat oven to 350 degrees.

Mix ingredients well to remove lumps.

Stir in any desired add-ins such as chocolate chips, nuts, etc.

Drop by teaspoonfuls onto an ungreased cookie sheet and bake for 8-10 minutes.

If desired, dust with powdered sugar after baking.

Chocolate gravy


1/2 cup butter

4 Tbsp unsweetened cocoa

1/4 cup flour

3/4 cup sugar

2 cups milk


Melt butter in skillet over medium heat. Add cocoa and flour. Stir until a thick paste is formed. Stir in sugar and milk and cook, stirring constantly, until thick.

Serve over biscuits for a delicious breakfast treat.

Pork Steak


2 Tbsp oil

4 pork steaks

salt, pepper, garlic powder

large onion, chopped

1 cup slicec fresh mushrooms or 2 small cans of sliced mushrooms

2 (10oz) cans of cream of mushroom soup

1 3/4 cups water

1 (1oz) pkg dry onion soup mix

1 Tbsp worcestershire sauce


Preheat oven to 350 degrees.

Brown pork steaks in oil over medium high heat, seasoning them with the salt, pepper and garlic powder. Place in 9x13 cake pan or casserole dish.

Saute onion and mushrooms in skillet. Add the rest of the ingredients to skillet and mix. Pour over the pork steaks, cover with foil and bake for 1 1/2 hours.

This turns a cheap cut of meat into a delicious, tender treat.

Sweet and sour chicken

chicken pieces approx 3 lbs(if there's bone)
1/2 cup french dressing
1/2 cup appricot jam
1 package french onion soup

place chicken in crockpot. Mix next 3 ingredients together, pour over chicken. Cook 4-6 hours on high or 6-8 hours on low. (my pot cooks hot, so low is done in 4-6).

Serve with rice and steamed broccoli.

3/4 cup milk
3 table spoons water
1 egg
1/4 cup butter
3/4 teaspoon salt
3 1/3 cups flour
3 tablespoons sugar
2 teaspoons yeast

Run the machine on dough cycle, then roll the entire dough out on floured counter till about 1" thick, smear with butter, sprinkle cinnamon and sugar mix on it then roll the whole thing up tight.
Cut into 1 1/2" rolls, put on greased cookie sheet. I let it rise for about 20 minutes in the oven on warm setting. Then cook on 350 for about 15-20 minutes.
I made powdered sugar, then mixed the powdered sugar I made, milk and cinnamon into a thick glaze and poured it over them when they were still hot!

COLD SPINACH DIP
Categories: Dips, Appetizers
Yield: 4 servings

1 pk Spinach chopped(cook/drain)
1 c Water chestnuts(drain/chop)
1 pk Knorr vegetable soup mix
1 c Mayonnaise
8 oz Sour cream

Mix all. Refrigerate 2 days. Serve on crackers.

Oliebollen

1 envelope dry yeast
3 tbsp sugar
1/2 c warm water
2 eggs, well beaten
1-1/2 c lukewarm milk
1/2 tsp vanilla
4 c flour
2 c raisins
3 apples, peeled and diced
frying oil
icing sugar

Sprinkle yeast and sugar over warm water, let stand until yeast is completely softened. Mix with eggs, milk and vanilla. Beat in flour slowly. Add raisins and apples. Cover bowl and let rise until doubled in size. Drop by heaping teaspoons into hot frying oil. Turn if necessary. Remove from oil. Sprinkle with sugar while hot. makes 5 dozen.
