View Full Version : Yummy Chocolate Chip Muffin Recipe

From "Muffins and Quick Breads with Schmecks Appeal" by Edna Staebler

Chocolate-chip muffins

1 egg
1 c milk
1 tsp vanilla
1/3 c oil
1 1/2 c flour
1/2 c sugar
1/4 tsp salt
1 tbsp. baking powder
1 c choc chips and a few more

Beat together the egg, milk, vanilla, and oil. Sift together the flour, sugar, and baking powder, and stir in chocolate chips. With as few strokes as possible stir the liquid into the dry ingredients. Bake at 375º for 20 min. As soon as you take them from the oven, drop a few chocolate chips on top of each muffin. Remove to a rack and serve before they are cold.

Michelle, can you tell me how much baking powder goes in this recipe? Thanks.

I made them and the kids love them but they didn't rise and I went back and realized that b.powder was listed in the instructions but not in the list of ingredients. Can't you tell I don't read instructions very well when I'm baking!! I just toss and stir!
