I really need this and think it would benifit everyone if we could post our meals under a $1.Esp for the under a $1 challenge.

Is this under $1.00 for whole meal or under $1.00 per person who you are feeding?

Ok, I just made a pan of polenta, this should easily serve 4 hungry people...
Cost? About .25 for the polenta, and I used 1 teaspoon of olive oil..so marginal cost there for that..

You can top this with some sliced cheddar( .99 for an 8oz block would go a long ways), or some sliced satueed mushrooms...I'm thinking some cream of mushroom soup would be devine. (Cost for campbells mushroom soup (lowest price) around .69 or .59 a can)

I'm eating it just sprinkled with some basil (again marginal cost)

Serve it with some tomato& cucumber wedges and a loaf of bread and I think you'd have a meal :)

Ok so to sum up
Polenta for four- five .25 (this is @ .75/lb not on sale)
Cheese for four -five .30 ? (thin slices from the .99 cent block)
Loaf of bread HM or storebought? .50 should do it?(assuming some is saved from a storebought loaf for later)
Cucumber/tomato .33 for cucumber and .75 for tomato? Or you could do other cheaper veggies...
Total should be around 2$ to serve a family of 4-5?

I can't imagine doing many different meals for under 1$ for the whole family :o Unless it was a lot of free after coupon stuff?

Ok, I'm off to figure out my next cheap meal...

Chilli Cheese Baked Potatoes (cn. chilli, potatoes, cheese
Ramen with egg (like egg drop soup)
Baked Cheese grits (quick cook grits - not instant, cheese)
Tuna Pasta Toss (olive oil, tuna, minced garlic, spaghetti noodles, spaghetti cheese)
Lentil and rice soup (lentils, rice, olive oil, onion, garlic, lemon juice)
Beans and Weiners (I get hotdogs during B1G1F deals)
Fried Rice (Cooked rice, egg, celery, carrot, onion, soy sauce, garlic)
Beans and Rice (beans, rice, bacon ends)
Biscuits and Gravy (Brown the sausage, make a white sauce, HM Biscuits)
Omelets
Tuna Toast (can tuna, white sauce, can mushrooms, toast)
Veggie saute (whatever squash is on sale, cn. tomatoes, garlic, onion, served over rice)
Unstuffed cabbage soup (Cn. Tomatoes, chopped cabbage, onion, garlic, some gr. meat for seasoning or omit if going vegetarian, rice)

mylittle4-its for the whole meal

Last night made turkey chicken casserole

turkey-free
cream of chicken-.10
stuffing-.10

Mix turkey with cream of chicken and a little water and put in pan top with stuffing and cook on 350degrees for 30 min or until golden
can of peas on the side.25

total meal .45

Fed me and dh 3 plate fulls and the kids 1 1/2 times cause they couldn't eat the whole second helping.

ok, tonight's dinner was little pizza's..

1 bridgford loaf (.33 )
tiny bit of spagetti sauce(.03?)
Mozzarella, again small amount from the costco bag we got(.25?)
Provolone, just some sprinkled on(.15)

with the leftover dough I made a cinnamon loaf (ayla loved it)
free or close to free margarine(.05)
some sugar and cinnamon(.05?)

cup of hot chocolate, made with 1 1/2 packets(.07)

I've got 7 cents to go till 1$ so if they had wanted veggies I could have given her some for a cost of around 6 cents :)
1 cent under still..

I guess it's not so hard to do after all :D
(on second thought, usually dh needs his steak or chicken which is always at least 1$ or more for just the meat for him alone)
