I made this recipe tonight and wanted to post it. It's pretty yummy.
If you like a crunchy oatmeal cookie, then this isn't the cookie for you. These are chewy and one of the better oatmeal cookie recipes I have baked.
Ingredients:
1 cup of white sugar
1 cup brown sugar (packed)
2 cups flour
2 eggs
1 cup butter softened
1 tsp vanilla extract
1.5 tsp cinnamon
3 cups quick cooking oats
1 tsp baking soda
Cream together the butter and both sugars. Beat in the eggs. Add the vanilla. Combine the flour, baking soda, and cinnamon. Once stirred add the oats. Refrigerate for an hour.
Preheat oven to 375 degrees. Make sure to grease your pans. I use parchment paper. Roll the dough into balls and place on the cookie sheet about 1.5 inches apart.
Bake for approximately 10 minutes. Check that the edges are golden brown.
I didn't add raisins or chocolate chips, but I think they would be great in these cookies too.
I barely had them out of the oven and they were being eaten here.
