Spinach 'n' Bean Tostadas
makes 2 servings (3 points- WW)
1/2 cup canned fat-free refried beans
2 tostada shells, about 1/2 oz each
1/4 cup thawed and well-drained frozen chopped spinach
1/4 cup EACH salsa, shredded lettuce, chopped tomato, and fat-free cheddar cheese
2 tablespoons fat-free sour cream
hot sauce to taste (optional)
1) preheat oven to 350F
2) Spread 1/4 cup refried beans on each tostada shell; top each with 2 tablespoons spinach. Place on baking sheet; bake 5 minutes
3) Transfer to serving platter; top each with 2 tablespoons salsa, lettuce, tomato, and cheese, then 1 tablespoon sour cream. Serve immediately, with hot sauce if desired.
Nutrition info: 170 calories, 1 g fat, 6g fiber.
