I'm not sure if you can figure out the POINTS in these but they are very healthy.
Meatless Meatloaf
Category: Main Vegetarian Sub-Category: Vegetable Type: High

Ingredients:
1/2 lb. fresh spinach
1/2 lb. green beans
1/2 lb. shelled walnuts
1 medium sized onion
1 carrot (good size)
1 celery knob, cut and ground
1 cup bread crumbs
1 (8 oz.) can baked beans
3 eggs, lightly beaten
1 Tbsp butter, melted
1 tsp salt
1/4 tsp pepper
1/8 tsp paprika
1/4 cup soft cracker meal
1/2 cup hot water, poured into pan
Directions:
Wash the fresh vegetables and run through a food grinder with
walnuts, onion, carrot and celery. Mash the baked beans and mix with the vegetables. Blend in the eggs, melted butter and seasonings, mixing thoroughly. Form into a loaf; sprinkle with cracker meal. Place the loaf in a well-greased 9-inch shallow baking pan, adding a little water to the pan. Bake for 1 hour at 350°, until firm. This tastes like a real meat loaf.

cream in each glass; add 1/4 cup club soda to each glass. Top each with 1 tablespoon whipped topping and 1 cherry.

1/2 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp salt
4 garlic cloves
4 (6 ounce) tuna steaks (about 1/2 inch thick)
1 tsp olive oil
1 tsp cracked pepper
Cooking Spray
Lime Slices (optional)
Directions:
Combine first 5 ingredients in a large shallow dish; add fish,
turning to coat. Cover and marinate in refrigerator 1 hour, turning
fish occasionally.
Preheat broiler. Remove fish from dish, discarding marinade. Brush oil over fish; sprinkle with pepper. Place fish on broiler pan coated with cooking spray; broil 6 minutes or until fish flakes easily with a fork. Garnish with lime slices, if desired.
