2 teaspoons peanut oil
2 medium red bell peppers -- cut into thin strips
8 ounces sliced fresh mushrooms
2 large garlic cloves -- minced
12 broccoli flowerets
1 mango -- peeled and sliced
1/2 cup fat-free, reduced-sodium chicken broth
1/4 cup pineapple juice
3 tablespoons reduced-sodium soy sauce
1/2 (12.3-ounce) package firm tofu -- cubed
2 tablespoons smooth peanut butter
Cook noodles according to package directions, omitting salt and fat.
Place peanut oil in a large skillet over medium-high heat until hot.
Add peppers, mushrooms and garlic; saute 5 minutes. Add broccoli and mango; saute 4 minutes. Stir in broth, pineapple juice and soy sauce; cook 5 minutes or until thickened. Reduce heat to low. Stir in tofu and peanut butter. Cook until thoroughly heated.

2 cups water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup unsweetened applesauce
2 large eggs
1/2 cup vegetable oil
3 tablespoons liquid sugar substitute
Vegetable cooking spray
Place raisins and water in a medium saucepan; bring to a boil. Cover, remove from heat and let stand 5 minutes.
Drain raisins, discarding water.
Combine flour and next 3 ingredients, stirring well. Set aside.
Combine applesauce and next 3 ingredients in a large bowl. Add flour mixture to applesauce mixture, stirring until blended; fold in
raisins. Pour batter into a 13 x 9-inch baking pan coated with
cooking spray. Bake at 350º for 35 minutes or until wooden pick
inserted in center comes out clean. Cool in pan on wire rack 10
minutes; remove from pan and let cool completely on wire rack.

1 5.5-ounce package sugar-free vanilla wafers -- (about 45)
7 medium bananas -- sliced
Combine pudding mixes and prepare according to package directions, using 5 cups milk and a wire whisk. Add sour cream and one-third of the whipped topping to pudding; stir well. Line a 13 x 9-inch baking dish with vanilla wafers; reserve remaining wafers. Arrange banana over wafers. Pour pudding mixture over bananas. Line edge of dish with wafers, reserving 4 wafers to crumble and sprinkle on top. Cover and chill at least 3 hours.
Spread remaining whipped topping over pudding. Cover and chill.
Sprinkle crumbled wafers over topping before serving.

1 1.4-ounce package sugar-free instant chocolate pudding mix
1 1.3-ounce envelope whipped topping mix -- (such as Dream
Whip)
1 1/2 cups nonfat milk
1/2 teaspoon vanilla extract
Sugar-free peppermint candies -- coarsely chopped, for decoration
Coat a 12-cup Bundt pan with cooking spray, and set aside. Beat
margarine and next 4 ingredients at medium speed of an electric mixer until creamy. Add flour to margarine mixture alternately with milk, beginning and ending with flour. Mix at low speed after each addition until blended.
Beat egg whites at high speed until stiff peaks form. Fold egg whites into batter; pour into pan. Bake at 325º for 45 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan on a wire rack 10 minutes; remove from pan, and let cool completely on wire rack. Spread Chocolate Frosting on top and sides of cake. Sprinkle top of cake with crushed peppermint candies.
CHOCOLATE FROSTING: Combine pudding mix and topping mix in a large bowl. Add milk and vanilla; beat at low speed of an electric mixer until blended. Beat at high speed 4 minutes or until mixture forms soft peaks. Yields 3 cups.

powder and red pepper; sprinkle half of mixture over meat. Coat a nonstick skillet with cooking spray; place over medium heat. Add meat; cook 5 minutes on each side. Remove from skillet; keep warm.
Add onion, green pepper and garlic to skillet; saute until tender.
Add remaining cumin mixture, broth and beans. Bring to a boil; reduce heat and simmer, uncovered, 5 minutes, stirring occasionally. Stir in tomato. Arrange meat over bean mixture. Cover and simmer 5 minutes.

1 cup fat-free margarine
3/4 cup sugar
1/2 cup granulated sugar substitute
1 cup fat-free egg substitute
1/4 cup vanilla extract
3 cups self-rising flour
1 cup nonfat milk
2 egg whites
---CHOCOLATE FROSTING---
1 1.4-ounce package sugar-free instant chocolate pudding mix
1 1.3-ounce envelope whipped topping mix -- (such as Dream
Whip)
1 1/2 cups nonfat milk
1/2 teaspoon vanilla extract
Sugar-free peppermint candies -- coarsely chopped, for decoration
Coat a 12-cup Bundt pan with cooking spray, and set aside. Beat
margarine and next 4 ingredients at medium speed of an electric mixer until creamy. Add flour to margarine mixture alternately with milk, beginning and ending with flour. Mix at low speed after each addition until blended.
Beat egg whites at high speed until stiff peaks form. Fold egg whites into batter; pour into pan. Bake at 325º for 45 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan on a wire rack 10 minutes; remove from pan, and let cool completely on wire rack. Spread Chocolate Frosting on top and sides of cake. Sprinkle top of cake with crushed peppermint candies.
CHOCOLATE FROSTING: Combine pudding mix and topping mix in a large bowl. Add milk and vanilla; beat at low speed of an electric mixer until blended. Beat at high speed 4 minutes or until mixture forms soft peaks. Yields 3 cups.

2 teaspoons ground cumin
1 teaspoon chili powder

1 1/2 cups chopped onion
1 1/4 cups chopped green bell pepper
2 cloves garlic -- minced
1/2 cup no-salt-added beef broth
15 ounces no-salt-added pinto beans -- drained
25 whole cherry tomatoes -- quartered
Trim fat from steak; cut steak into 4 pieces. Combine cumin, chili
powder and red pepper; sprinkle half of mixture over meat. Coat a nonstick skillet with cooking spray; place over medium heat. Add meat; cook 5 minutes on each side. Remove from skillet; keep warm.
Add onion, green pepper and garlic to skillet; saute until tender.
Add remaining cumin mixture, broth and beans. Bring to a boil; reduce heat and simmer, uncovered, 5 minutes, stirring occasionally. Stir in tomato. Arrange meat over bean mixture. Cover and simmer 5 minutes.

Bring water to a boil in a small saucepan. Add gelatin; cook 1
minutes or until gelatin dissolves.
Combine cranberries and sugar substitute in a small bowl. Add
cranberry mixture, celery and remaining ingredients to gelatin; stir well. Pour mixture into a 13 x 9-inch dish. Cover and chill until
slightly thickened. Serve with turkey, chicken or pork.

Beat margarine, egg and applesauce at medium speed of an electric mixer until blended. Add sugar substitute and vanilla.
Combine flour and next 3 ingredients; add to applesauce mixture. Beat at medium speed 4 minutes. Add pecans and dates; stir well. Pour batter into an 8-1/2 x 4-1/2 x 3-inch loaf pan coated with cooking spray. Bake at 350º for 1 hour or until a wooden pick inserted in center of loaf comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan and cool completely on wire rack.
