2 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup granulated sugar substitute (such as SugarTwin)
1/4 teaspoon ground nutmeg
1 1/3 cups nonfat buttermilk
1/2 cup chopped dried apricots
1/4 cup margarine -- melted
1 teaspoon grated lemon peel
1 egg -- lightly beaten
Cooking spray
1 recipe Sugar-Free Lemon Glaze -- see recipe

Combine first 6 ingredients in a medium bowl; make a well in center of mixture. Combine buttermilk, chopped apricots, melted margarine, lemon peel and egg. Add to dry ingredients, stirring just until dry ingredients are moistened.

Spoon batter into an 8 1/2 x 4-inch loaf pan coated with cooking
spray. Bake at 350º for 45 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan. Drizzle with Sugar-Free Lemon Glaze.

1 small onion -- chopped
1 green bell pepper -- chopped
8 ounces fat-free cream cheese -- softened
2 cups fat-free cottage cheese
1/4 cup fat-free egg substitute
1/2 cup chopped fresh parsley
1 teaspoon onion powder
1/3 cup grated Parmesan cheese
8 ounces no-boil precooked lasagna noodles
Cooking spray
1 26-ounce jar no-sugar added tomato- and basil-flavored
pasta sauce
8 ounces shredded part-skim mozzarella cheese

Cook meat, onion and green pepper in a large skillet over medium heat until meat is browned, stirring until it crumbles. Drain and pat dry with paper towels; set aside.

Combine cream cheese and next 4 ingredients; stir in 1/4 cup Parmesan cheese. Spread 1/2 cup pasta sauce in bottom of a 13 x 9-inch baking dish coated with cooking spray. Place 4 noodles over sauce (noodles may overlap slightly in center). Spoon half of cream cheese mixture (about 1-1/2 cups) over noodles. Sprinkle half of meat mixture (about 1-1/2 cups) over cream cheese mixture.

Sprinkle 3/4 cup mozzarella over meat mixture. Top with 3/4 cup
sauce. Repeat layers. Place 4 noodles over sauce; top with remaining 1 cup sauce. Sprinkle remaining mozzarella and Parmesan cheeses over sauce. Bake, uncovered, at 350º for 35 minutes or until bubbly.

Cook macaroni according to package directions, omitting salt and fat. Drain. Combine flour and 2 tablespoons milk; stir until smooth. Combine flour mixture, remaining milk, and margarine in a saucepan, stirring well. Cook over medium heat, stirring constantly, until thickened. Remove from heat. Add cheese, salt and pepper; stir until cheese melts. Add egg substitute, stirring constantly. Combine cooked macaroni and cheese mixture. Pour into a 1 1/2-cup baking dish coated with cooking spray. Sprinkle with bread crumbs and paprika. Bake, uncovered, at 350º for 20 minutes.

Pour gelatin into container of an electric blender; cover and process 10 seconds, stopping once to scrape down sides. Add whipped topping; cover and process 15 seconds.

Pour half of gelatin mixture evenly into 6 dessert glasses; let stand 1 minute. Top with remaining gelatin mixture. Cover and chill 1 hour or until set.

2 tablespoons beef bouillon granules
1 large garlic clove -- minced
4 medium carrots -- cut into 1/2-inch pieces
2 stalks celery -- cut into 1/2-inch pieces
1 cup mashed potato flakes

Sort and wash beans; place in a large Dutch oven. Cover with water to a depth of 2 inches above beans. Bring to a boil; boil 2 minutes; remove from heat, cover and let stand 1 hour. Drain beans and return to pot. Add 8 cups water and next 5 ingredients. Bring to a boil; cover, reduce heat and simmer 2 hours or until beans are tender.

Add carrot and celery; simmer 30 minutes or until tender. Add potato flakes; cook until slightly thickened, stirring often.

Stir sour cream into remaining gelatin mixture; spread evenly into
pan. Chill 20 minutes or until set. Cut into squares and serve on

Cook potato in a saucepan in boiling water to cover 10 minutes or until tender. Drain. Beat potato at high speed of an electric mixer until smooth. Add milk, 1 tablespoon sugar substitute, juice, salt, allspice and egg yolk; beat at high speed until smooth.

Beat egg white at high speed of an electric mixer until stiff peaks
form; fold egg white into potato mixture. Spoon into two 6-ounce
ramekins coated with cooking spray. Sprinkle 1 tablespoon sugar
substitute and pecans over potato mixture. Bake at 400º for 20 to 25 minutes or until thoroughly heated.

1 10.5-ounce angel food cake
2 cups sliced strawberries
2 cups fresh blueberries
1 12-ounce container fat-free whipped topping

Prepare gelatin according to package directions. Prepare pudding
according to package directions. Tear cake into bite-size pieces.
Arrange half of cake pieces in a 3-quart trifle bowl. Spoon half of
gelatin over cake. Spread half of pudding mixture over gelatin.
Sprinkle one-third of strawberries and one-third of blueberries over pudding. Spread half of whipped topping over berries. Repeat layers with remaining cake, gelatin, pudding, one-third of berries, and whipped topping. Sprinkle remaining one-third fruit over trifle. Cover and chill.

Combine apple and orange juice concentrate in a bowl; toss well. Stir in celery, walnuts and raisins. Fold in whipped topping. Serve

brown Sugar Twin)
3 tablespoons cider vinegar
2 tablespoons low-sodium Worcestershire sauce
2 teaspoons minced garlic
1 1/2 teaspoons prepared mustard
3/4 teaspoon ground red pepper
1/4 teaspoon black pepper

Combine all ingredients in a medium saucepan. Bring to a boil; cover, reduce heat and simmer 20 minutes.

Brush over chicken or pork while grilling.
