I'm looking for a spoon bread recipe that is tried and true.
My great grandma used to make one that was kinda biscuit like and she served it with a bacon fat type gravy.

I have not tried this recipe yet as I got the cookbook today. (I am a cookbook addict. Unfortunately, I don't use them as much as I should.) It is from page 164 of the Family Treasures Cookbook, which was complied by an Amish lady.

Farmhouse Spoon Bread

1 1/2 cup boiling water
1 c. cornmeal
1 T. Butter or Margarine
3 large egg yolks
1 c buttermilk or sour milk
1 T. sugar
1 t. salt
1 t. baking powder
1/4 t. soda
3 large egg whites

In medium bowl, using a wire wisk, stir boiling water into cornmeal until smooth and thickened. Whisk in butter until melted. Cool for 5 min. Whisk in egg yolks. Add buttermilk, sugar, salt, baking powder, and soda. Blend well. Beat egg whites until soft peaks form. Mix batter into beaten egg whites. Pour into greased baking dish. Bake at 325 for 45-50 minutes or until knife inserted into center comes out clean. Serve at once as this has a tendency to become soggy if it sets too long, serve with sausage gravy.
