View Full Version : Weight Watcher's arden Soup...SO GOOD!!!

Baby Nurse sent me lots of info on WW. I read up on the soup, it has zero points and suggests that you eat this soup before each meal. The kids lost the little spray nozzle to my Pam, so I substituted 1 TBLSP olive oil, everything else stayed just about the same. When it called for 3 cups of chicken broth I used 4 because what was I to do with an extra cup of broth? I was cooking this soup and the kids aked for some!!! I tasted it it is absolutely sinful and has a whopping 42 calories per 1 cup serving. I could eat this alone for some meals, but add a piece of bread and you could go to heaven

2/3 c sliced carrots
1/2 cup diced onions
2 garlic cloves
3 cups fat free chicken broth ( I used 2 cans)
1 1/2 cups diced green cabbage
1/2 cup green beans
1 TBSP tomato paste
1/2 tsp dried basil
1/4 tsp oregano
1/4 tsp salt
1/2 cup diced zucchini

saute carrots, onions and garlic in a saucepan sprayed with non-stick spray until soft, about 5 minutes

Add broth, cabbage, beans, tomato p[aste, basil, oregano and salt; bring to a boil. lower heat and cook until beans are soft.

stir in zucchini and heat 3-4 minutes.

serve hot makes 4 servings

42 calories, 0 fat, 0 cholesteral, 63 mg sodium, 8 g carbs, 2.4 g dietay fiber, 3 g protein 41 mg calcium...WHAT MORE COULD YOU ASK FOR??

yup...I used to eat this ALL the time while on WW. I think I ate too much of it though...I overdosed on it :laugh:

Robin, I just made some, LOVE it! You can substitute different zero point vegetables you like (add appropriate points for corn), so you don't get bored! I also have a variation of this soup that is spicy (I used to use Rotel tomatoes, but alas, not available in Canada, sigh). I'll try to find it and post it for you, it is also zero points!

I'll have to try this one. I got my taco soup recipe from WW. It's a yummy one too but it does have points.

I did this one with no zuchini and no green/red peppers. Substituted brocolli and califlower. Was a lot better than I figured it would be. Next time I will add a bit more spices.

Here's my Veggie Soup recipe (I like it spicy!)
1 onion
1-2 garlic cloves, chopped
1 tsp fresh ginger, minced (I leave this out)
Saute in pan with non-stick cooking spray

Add:
2 cans fat-free chicken broth
1 can tomatoes with green chilies
1 can whole stewed tomatoes
1/4 cup fresh chopped parsley (2 tsp dried) or cilantro
1/4tsp salt
1/4 tsp pepper
1 package frozen mixed (non-starchy) vegetables or chopped fresh vegetables of choice
2 cups cabbage chopped

Bring to a boil and simmer for 20 minutes. The WHOLE POT 0 POINTS!!
Enjoy, this one is delicious!
