looking for some lowfat dessert ideas besides jell-o.

Pumpkin Mousse
2 pkgs Sugar Free Jello Vanilla Pudding
2 cups nonfat milk **
1 cup Cool Whip Light Topping
1/2 tsp pumpkin spice
1 cup canned pumpkin

Mix all ingredients together

magic pudding

fat-free saltines (30)
1 container, 8 oz., fat-free cool whip

Cover bottom of small casserole dish with 15 of the saltines. Cover saltines with half of the prepared chocolate pudding.

Put remainder (15) of saltines on top of pudding. Cover with remainder of pudding.

Top all with container of cool whip.

Let sit in fridg. for at least 4 hours to allow pudding to soak into crackers.

after the dessert has set for 4 hrs, the crackers taste exactly like a thin layer of pie crust.

Chocolate Fudge Shake

2 Cups cold skim milk
1 Package Jell-o Chocolate Fudge Instant Pudding and Pie Filling, fat-free, sugar-free-Reduced Calorie
2 Cups crushed ice

Pour milk into blender container. Add remaining ingredients and cover. Blend at high speed at 15 seconds or until smooth.

(mixture thickens as it stands. Thin with additional milk, if desired.)

Makes: 4 portions
1 Point Per Serving

CHEWY COCONUT MACAROONS

1 box fat free angel food cake mix (plain)
10 ounces flaked or shredded coconut
1/2 cup water

Combine all ingredients (it might look hopeless at first, but it WILL come together )and drop by teasoonfuls onto a greased cookie sheet. Bake at 350 for 10 minutes (they will spread a bit and get slightly puffy). Remove to a rack to cool.

Once they cool, they sort of collapse, and get that crusty outside with a soft center.

Makes about 40 cookies 1-2 points each depending on the cake mix you use.

Pumpkin Angel Food Cake

1 angel food cake mix
1 16 oz can pumpkin
1 cup water
1 tsp pumpkin pie spice
Mix together and bake as directions on cake box.

Serves 12- 3 pts each

Check your local library for the Healthy Exchanges line of cookbooks by JoAnn Lund. Almost all of her cookbooks have a dessert section and I know of at least one that is devoted entirely to desserts. Also check it out on www.healthyexchanges.com
