Recipe Notes:
For non-dairy bars replce yogurt with unsweetened applsauce, canned pumpkin or mashed bananas. Or try Silken Tofu in the Protein Booster section. Add an extra pinch of salt if using pumpkin or silken tofu. The range of sugar allows you to make these bars sweeter or not so sweet according to what you want.

Protein Boosters:
You can make the main recipe with any of the following adjustments:]
1* Relpace canola oil with 1/2 cup Peanut Butter or Almond butter(soften in Micro)
2* Replace flour with Quinoa, ground to a powder in a blender
3* Replace yogurt with Silken Tofu 9soft or firm) add extra pinch os salt
4* Add 2-3 TBS powdered egg whites
5* Add up to 1 cup Chopped nut and or sunflower seeds.

Non Stick Cooking spray
1 C soy protein powder (I use whey)
1/2 C unbleached all purpose flour
2 C rolled oats
1/2 C Oat Bran
1/2 tsp Cinnamon
3/4 tsp salt
1/2-2/3 C packed brown sugar
1 C semi-sweet Chocolate Chips
1 1/2 C plain or Vanilla yogurt
1/4 C canola oil
2 tsp Vanilla Extract

Yeild 20 med. sized bars

1 Preheat oven to 350 drgrees F325 for glass pan.
Lightly spray a 9x13" baking pan and a baking tray with non stick spray

2. Mix together the protein powder, flour, oats, oat bran, cinnamon and salt in a large bowl.
Crumble in the brown sugar, rubbing it with your fingers to break up any clumps.
Stir in the chocolate chips.

3. Measure the oil,yogurt and vanilla into a second bowl, stirring until well combined. Add the wet mixture to the dry and mix patiently untill thoroughly blended (you may have to use your hands it is a very thick batter on the verge of a dough)

4. Transfer the mixture to the prepared pan, patting it evenly into place with you hands. Bake in the center of the oven for 15 minutes, then remove the pan from the oven and cut into bars of any shape or size. Place the bars on the prepared baking tray and bake for anothe r15 minutes or till golden around the edges. If you like them extra crunchy turn the oven off and leave them in up to 45 minutes But NO LONGER. Remove the bars from oven, place on racks to cool.
5. Eat the bars within a few hours or seal them in a Heavy-Duty ziplock bag and freeze. For maxium crispness, refresh them in the toaster oven after defrosting about 3 minutes
