Fresh Tomato Salsa

2 medium tomatoes -- seeded and coarsely chopped
2 tablespoons green onion -- thinly sliced
1 tablespoon fresh cilantro -- chopped
OR
1 tablespoon fresh parsley -- chopped
1 tablespoon red wine vinegar
1 jalapeņo pepper -- seeded and minced
2 small cloves garlic -- crushed
1/4 teaspoon salt
1/4 teaspoon black pepper -- coarsely ground

Combine tomato, green onion, cilantro, wine vinegar, jalapeņo pepper,
garlic, salt and black pepper; cover and reserve until ready to
use. Yield: 8 servings.
