Vegetarian, Diabetic, Low-Fat Sacramento Sandwiches (no exchanges)

4 slices whole-wheat bread
1/4 cup part-skim ricotta cheese
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
salt and pepper to taste
1 medium tomato, thinly sliced (8 slices)
1/4 medium avocado, thinly sliced (8 slices)
1/2 lemon

In a small bowl, blend together ricotta cheese and oregano until smooth.
Season lightly with salt and pepper.
Spread on bread and top with tomato slices.
Cut the sandwiches in half lengthwise.
Garnish with an avocado slice and a squeeze of lemon juice on the tomato slices.
Makes 8 mini open-faced sandwiches.
