South Of The Border Zucchini
1 medium onion -- diced
2 small green bell peppers -- diced
1/4 cup olive oil
2 cups fresh corn -- cut from cob
2 zucchini -- thinly sliced
2 yellow squash -- thinly sliced
1 tomato -- chopped
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Saute onion and green pepper in oil in a heavy pot 2 to 3 minutes. Add
remaining ingredients, and bring to a boil. Cover, reduce heat, and
simmer 8
to 10 minutes until vegetables are tender. Yield: 8 servings.
