I always save juice from cooking roasts and turkey and place in a container and freeze until I have enough. Then I add a pinch of this, and a pinch of that, a cup of this and a cup of that. I've never ever used a recipe for homemade soup. Sorry, I'm not much help but thats the only way I make soup!! Katybird 02-20-2003, 04:11 PM Sherry, A staple at our house is Taco Soup. It is really easy and quick. 1 lb hamburger 1 onion (chopped) 1 pkg taco seasoning 1 pkg dry ranch dressing (if I don't have it, I just leave it out) 1 can stewed tomatoes 1 can Rotel 1 can Pinto beans 1 can Kidney beans 1 can Navy or Great Northern beans 1 can corn Brown hamburger with onion, drain. In large pot add hamburger and the rest of the ingredients with the juice in each one (this makes the broth). Simmer over medium heat for at least 1 hour. I usually just toss everything in my crockpot in the morning and let it simmer all day on low. This is really tasty and it freezes well. I have used it with my OAMC before. I hope this helps. Here's the recipe: 2 tablespoons butter medium chopped onion 1 chopped celery stalk 3 cups chicken broth (we tend to use boillion paste) 1 head of broccoli (florets) 3 tablespoons butter 3 tablespoons all-purpose flour 2 cups milk pepper to taste Directions 1 Melt 2 tablespoons butter in medium sized pot, and saute onion and celery until tender. 2 Add broccoli and broth, cover and simmer. Puree soup and return to heat. 3 In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Whisk continuously until a nice consistency and add it to the broccoli and broth mix. Whisk some more. Add pepper and salt to taste. Super yummy. Hubby is making it tonight. :-) You can always add more butter, milk, flour, salt, pepper to get it to the texture that you want. Can add garlic or potatoes too. For a twist, add some velveeta for broccoli and cheese soup. We use different mixed veggies too. PrairieRose 02-21-2003, 01:02 AM Lisa's Homemade Potato Soup 2 pieces fried bacon, crumbled 4-6 med. potatoes, peeled, boiled, whipped 1 small onion chopped butter milk salt and pepper to taste Using just 1/2 spoon full of oil or shortening cook chopped onion in bottom of dutch oven until cooked.....till it's sorta see through. Pour a little milk in bottom of pan to cool before you put your potatoes in along with crumbled bacon. Add butter, salt, pepper to taste and fill to about a 1/2 inch from the top of pan with milk. Cook over a low-medium heat, stirring often till bubbly. Taste for more salt, butter, pepper.... . Serve hot with a garnish of grated cheese and enjoy! debbiepete 02-21-2003, 10:57 AM My famly calls me the soup queen LOL Whenever there is a turkey or chicken carcass I throw it in a big pot filled with water and a few chicken boullion, garlic powder, salt and pepper and chopped celery tops. I boil this for 3-4 hours. Take the bones out, then add fresh sliced carrots. 1 chopped onion, 2 chopped potaotes boil till they are almost done, add 1 cup rice and a hanful of broken spaghetti. I love "dump and run" kind of crockpot recipes! ;) Here are a few of my favorites: Crockpot Potato Soup (the best potato soup I've had yet, but I may have to try Carolyn's recipe!) 4-5 large potatoes, cubed 1 large onion, diced 1 TBSP margarine (I use more) 1 chicken boullion cube parsley to taste (approx 1-3 TBSP) 3 cups water 1 can evaporated milk 1/4 cup flour Place everything but the milk and flour in the crockpot and cook on low all day. 30 minutes to one hour before serving, stir in the flour and evaporated milk. After the soup starts to thicken slightly, it is ready to serve. You can also add 1/4 pound of Velveeta to this to make Cheesy Potato Soup. (I've never tried that, but that's what the original recipe says.) ----------------------------------------------------------------------------- Amy's Easy Veggie Soup (yes, my own recipe!) 2 29oz cans chunky homestyle VegAll 1 can corn 1 can green beans 2 cans stewed tomatoes 1 large can tomato sauce (or ketchup) 1 lb stew meat, cubed Cilantro, parsley, Mrs Dash, dried minced onion-- all to taste. I probably use 3 TBSP cilantro, and a few shakes of the others. Dump everything in the crockpot, fill crockpot with water (or beef broth if desired) and cook on low all day. (No need to precook the stew meat, it will get done in the soup.) Obviously, this can be varied to use whatever canned veggies you have in the pantry. I've used frozen, but the flavor isn't the same. I actually prefer it without the meat, but DH has to have the meat in there. Another way I do this is to start a freezer bag and add in leftover cooked veggies (undrained) after meals. When the bag is full, it goes into my crockpot with some meat and seasonings.... now that's a frugal meal! ;) --------------------------------------------------------------------------------- Six Can Tortilla Soup 1 can corn 1 can cream of chicken soup 1 can chicken broth 1 large can chunk chicken 1 can diced tomatoes 1 can (4oz) diced chili peppers I also add: haberno pepper seasoning, Mrs Dash, cilantro, celery salt, red pepper, dried minced onion, and lots of black pepper. Dump everything into a large soup pot and simmer until chicken is heated through. Hanna´s currysoup. 2 servings: 1-3 tsp thai red curry 3 big potatoes 1 apple 1 small onion 5 cups water 1 chicken bullion cube. 1/4 cup of coconut milk ( optional) Peel the potatoes and apple, chop oinon,apple and potatoes into chunks. Put the thai curry paste into a pan with some oil, fry the veggies and apple in the curry add water and bullion and boil untill potatoes fall apart. Mash the veggies until the soup is smooth and if you want to add coconut milk and stir. |
