I just found this recipe for Pumpernickel Bread

1 cake yeast
2 c. warm (110 F) water
1 tsp. vegetable oil
2 tsp. molasses
1 tsp. caraway seeds
1 tsp. salt
2 1/2 c. pumpernickel flour (rye meal) or dark rye flour
1 c. whole wheat flour
Approx. 2 1/2 c. unbleached flour

In a 6 qt. mixing bowl, dissolve the yeast in the water. Add the remaining ingredients, mixing the salt with the flours and work them into a dough.

Turn the dough out onto a lightly floured surface and knead for 6 - 7 minutes, until the dough is smooth, elastic and somewhat glossy.

Return the dough to the mixing bowl and cover with a towel. Let dough rise in a warm place for 45 mins or until doubled in bulk.

Divide dough into 2 equal halves and shape each piece into a round loaf. Set loaves on a baking sheet that has been liberally dusted with cornmeal. Cover loaves with a towel and let rise again for 45 minutes.

Bake in preheated 400 F oven for 45 minutes or until golden brown. Remove the loaves from the baking sheet at once and allow them to cool on a wire rack. Makes 2.

(I'm not sure I would bake it at 400, probably 375. I'm going to try this recipe in a couple of days.)

Wow CJ--I asked for a recipe for pumperknickel bread ages ago! Thanks so much for remembering :)

And thanks for the bouquet--you're too sweet.

Now one question: where do I find "cake" yeast? I've never heard of this before.

Michelle, I think cake yeast is those little packages of yeast that you purchase in the stores.

Here is what I just found:

1 level tablespoon of dry yeast is equivalent to one cake of compressed yeast. Both kinds are found in supermarkets.

It also says in my book to make sure when you purchase pkg. yeast to check the dates on them!!

Michelle, it comes in a square little cake. You find it in the refridgerator section usually by the eggs. HTH

Thanks CJ and Diana--I'm off to the store tomorrow to get the cake yeast to make this for Dave. :)
