Orange Bread
Peel of 3 oranges
2 cups sugar
2 tablespoons water
4 cups flour
3 teaspoons baking powder
1 cup milk
2 eggs, lightly beaten
1/4 teaspoon salt
3/4 cup chopped walnuts
Lightly salted boiling water
Preheat the oven to 350 degrees.
With a sharp edged spoon, scrape as much of the white pith off the orange peel as possible.
Cut the peel into strips with kitchen scissors.
Add peel to lightly salted boiling water and simmer until tender, about 10 minutes. Drain.
Add one cup of the sugar and 2 tablespoons water to the peel.
Boil until clear, about 1 minute.
Cool. Sift the flour with the baking powder.
When peel mixture is cool, add the remaining sugar, milk, eggs, salt and the flour mixture.
Mix.
Fold in the walnuts.
Turn into 2 greased 9 x 5 x 3 inch loaf pans that have been lined with oiled paper.
Bake about 50 minutes, or until loaves test done.
Makes 2 loaves of bread.
