I've never done much canning so I don't know alot about that.I mostly freeze my veggies.

What do you do?

I prefer my green beans and pototoes - canned. Most others I prefer frozen, especially corn.

I usually do a mix of both- some frozen, some canned. Just in case my freezer or electricity goes out, I'll still have something to eat.

OH- you didn't ask, but I also dehydrate a lot of my fruits and veggies.

I mainly freeze, as it's easier to do in the hot weather. This year I'll be canning more and more, though, so that will be a better guage of what works best for us.

I freeze alot of my veggies and fruit ~ corn, beans, peas, asparagus, strawberries, raspberries, blueberries, cherries, pumpkin puree, rhubarb, zuchinni grated and some tomatoes. I can tomatoes, cucumbers/pickles/relish, peaches and pears, jams and jellies.

I freeze most of my vegetables, also. Some I dehydrate, too. I like the taste of the frozen vegetables better than the canned.
