I can't eat dairy or Mexican meals, but I'm sure others would appreciate seeing them, so please post all that you have.

Ground Beef and Potato meal
1 1/2 lbs ground beef
1 large clove garlic
1/4 tsp pepper
1/2 tsp thyme
2 large onions
6 medium potatoes
1 can cream of mushroom soup
1/2 cup water
cook ground beef and garlic in skillet until lightly browned, stir in pepper
and thyme, peel (I didn't) and slice potatoes and onions.
put 1/2 potatoes and onions into buttered crock pot.
Add browned ground beef and top with remaining potatoesd and onions.
mix mushroom soup and water and spread over top of contents.
cover and cook on low 8-10 hours or on high 3-4 hours.
I added a can of sliced mushrooms to mine...or you can add fresh if you like.

No dairy is tough. I know we talked about some different ideas on im, but I thought I would post some here too.

Soups
Stir Frys
Chicken and dumplings or over noodles.
Roasts
Homemade Pot Pies
Fried Rice
Fettucine Alfredo
Linguine and clam sauce
Sandwich night. (like BLT's, pitas, or club sandwiches)
A good chicken fried steak recipe would be an idea. I am going to look for one myself.
Meat ravioli (frozen food section)

I make a lot of simple meals. I mentioned to you making a meal out of the same ingredients as stuffed peppers, but making it a skillet meal instead of stuffed into bell peppers.

I know casseroles are tough for you with the no dairy, but I make them often too. Let me know if you find or try anything good on the crockpot groups.

I'll keep thinking of some meals for you. It just seems a lot of what I make has some sort of dairy in it. (even my soups) :-(

As you know, I am not one to skimp on meals. I'll cut back on a lot of things, but I make hearty, homestyle, and traditional type meals.

Maybe some vegetarian meals? I would love to incorporate more into our meals.
