How do you do yours?
I wash the taters
Icut them into julienne strips with skins on
soak in ice and water
drain
fry in hot oil
lightly salt w/ Lawrys salt

Done the same way in our home!!! Ds#2 gets a huge grin on his face each time I make them.
Gotta love homemade fries.

Since we are trying to eat healthy here, mine is a little different! I scrub the potatoes and julienne them. I toss them with about 1 or 2 tablespoons of oil (either olive oil, canola oil, or a flavored oil). Sprinkle with seasoned salt or whatever we are in the mood for and bake at 425 for 30-45 minutes until crispy. Sweet potato fries are done the same way, and really good and good for you!

I have never soaked mine in ice water, does it make them fry better, Robin. My family loves french fries, DH would eat them each meal if I let him, LOL.

I made potato wedges for the first time Sunday....I never realized how easy they were.
SPICY CHILI WEDGES
I scrubbed the potatoes really good and dried them with a kitchen towel.
I cut them lengthwise in half, then cut into 3 wedges per potato half and put them into a large bowl.
I mixed salt, pepper, garlic salt and chili powder together in whatever proportions you desire. You can add cayenne pepper if desired. Sprinkle wedges and toss, sprinkle again and toss and repeat till all wedges are coated really good with seasoning.
Layer in a single layer on sprayed cookie sheet, skin side down. Sprinkle with a little bit of oil (I used vegetable oil because that's what was handy). Bake at 450ºF for about 20 minutes. Stir around a bit on pan. Bake for another 15-20 minutes. Let cool slightly. Serve with your choice of condiments: catsup, sour cream and yes, French or Ranch Dressing.
