I usually make them in cacciatore, but today I am out of sauce and would like some other ideas.

I usually remove the skin and put them in the crockpot with bbq sauce. If you are wanting to have them tonight, that won't work.

You could boil and debone them and use the meat for a casserole or stir fry.

Sorry, I'm not a lot of help.

I throw them, after taking the skin off, in my favorite glass bake dish with some cubed, skin on potaoes, lots of raw carrot and onion slices, sprinkle with a bit of olive oil, garlic and rosemary and bake. Simple and one pot to clean.;)

I didn't cook them tonight, so I will try one of these recipes tomorrow night :)

I tried your recipe above, and I have just one thing to say YUM!!!!!

I added a little Mrs. Dash to what you had written above, and it was soooooo delicious. Before today, dh didn't like chicken thighs prepared any way other than cacciatore. You should have heard him complimenting it LOL
