I am looking for a tried-and-true recipe (or recipes) for eggless cookies. My dh used the last of the eggs the other day and didn't tell me :O I don't even have powdered milk to make the egg substitute :(

My dh used the last of the eggs the other day and didn't tell me :O I don't even have powdered milk to make the egg substitute :( Sara Noel 01-18-2002, 10:20 AM I haven't come across cookies, but here's a cake one: http://www.foodfunandfacts.com/noeggcake.htm NO EGG CANADIAN CHOCOLATE CAKE Ingredients: 3 cups flour 6 tablespoons cocoa 2 teaspoons baking soda 2 cups sugar 1 teaspoon salt 3/4 cup vegetable oil, divided by 3 6 tablespoons white vinegar, divided by 3 6 teaspoons vanilla, divided by 3 2 cups cold water Sift together the flour, cocoa, soda, sugar, and salt. Make 3 holes in the dry ingredients. In each hole, pour 1/4 cup oil, 2 tablespoons white vinegar and 2 teaspoon vanilla. Pour cold water over all. Stir just until well mixed. Pour in an ungreased 9x12 pan. Bake at 350 degrees for 35 to 40 minutes. Icing Ingredients: 1/2 cup butter 1/2 cup cocoa 7 tablespoons milk 1 pound confectioners sugar 1 teaspoon vanilla Melt the butter in pot and add the cocoa. STir and heat for one minute Pour in a bowl and add the sugar and milk, alternately. Then add the vanilla and spread on the cooled cake. If you use round cake pans, spread jam between the layers for a yummy treat |
