I have used Jiffy for years. *LOL* It's time for homemade.
ISO if a good recipe.

I use the recipe on the back of Quaker's cornmeal cannister--it's always come out good for me :)

I make mine the way my mom does.I don't measure,so hopefully you can just judge by how much to add...

In a medium bowl add cornmeal,1 or 2 eggs (I can't tell any diff by using 1 or using 2..so use how many you want..lol) then I add buttermilk and stir.Don't add alot of butermilk to start off with.If it needs more buttermilk,add more.You want the constiency (SP) to be a little like a pancake batter....
grease a pan with crisco... (I use a 8 inch cast iron skillet...)Cook@ 400 (your oven my vary..) for about 25 mins or till brown on top....

The next time I make cornbread,I'll measure and write everything down;)

That's it? 3 ingredients? All this time I have been using a recipe that calls for cornmeal, flour, baking soda, MELTED butter ADDED to milk and egg then to dry ingreds....I will have to try yours! It is a LOT easier!

Here's the recipe I make..........


1 cup all-purpose flour
2 T. sugar
3 tsp. baking powder
1 cup plain yellow cornmeal
1/2 tsp. salt
1 cup milk
1/4 cup oil
1 egg

Combine all ingredients and mix well. Pour into a greased 8-inch square baking dish. Bake at 425 degrees for 20 minutes or until a toothpick inserted into the center comes out clean. Cut into 9 squares.

I also use the one on the Quaker cornmeal container. I find it comes out alot better than the Jiffy!

This is from my grandmother, she was from TN so this is a cornmeal only recipe (some ppl don't like it without flour).

2 cups cornmeal

Sorry had a hand spasm or something there.

2 cups cornmeal 3 tsp baking powder
1 egg 1 tsp baking soda
1 cup milk 1/4 cup cooking oil (I use butter)

Mush it all together and bake 20 min at 425

It will make 12 muffins or use an iron skillet--I also freeze the muffins and use for bean soup.

Sara,

Try and find cornmeal in a brown bag... it has a wonderful cornbread recipe on the back.

I'll see if my mom still has the recipe... and email you a copy if she does..

Here is the one I use. It was given to my by a friend and my kids and dh are sold on it.

1 1/2 c. cornmeal (freshly ground popcorn if you have a Grainmill)
1 1/2 c. whole wheat flour
1/2 c. sugar
2 Tbsp. baking powder
1 tsp. salt
2 eggs
2 c. milk
1/3 c. olive oil

Mix first 5 ingredients, add remainder and miss. Bake at 325 until done.

The kids and dh love it with pancake syrup on top.
