Whole-Wheat Master Mix
12 Cup Recipe
4C unsifted whole wheat flour
4C unseifted regular flour
3Tbsp plus 2 tsp baking powder
2 tsp salt
1-1/2C shortening
1C non-fat dry milk
3-1/2 Tbsp sugar
25 Cup Recipe
8C unsifted whole-wheat flour
8C unsifted regular flour
1/2C baking powder
4 tsp salt
3C shortening
2C non-fat dry milk
7 Tbsp sugar
Combine dry ingredients in large bowl and stil until well blended. Cut in shortening with pastry blender or two knives until mixture looks like cornmeal. Cover and store in a cool dry place for up to 8 weeks.
