View Full Version : Cornmeal Master Mix

Cornmeal Master Mix
7C cornmeal
2C unsifted regular flour
4 Tbsp baking powder
1-1/3C non-fat dry milk
1 Tbsp salt
1/4C sugar
1C shortening
Combine all dry ingredients and stir carefully to blend. Add shortening and cut into dry ingredients until whole mixture looks like cornmeal. Store in a cool dry place. Makes 14 cups.


Muffins
3C Master Mix
2 Tbsp sugar
1 egg, beaten
1C water
Add sugar to mix and stir. Combine egg and water. Pour liquid into Mix all at once and stir just enough to blend. Batter will be lumpy.
Fill greased muffin tins 2/3 full and bake in 425F oven for 20 minutes. Makes 12


Oven Cornbread
2C Cornmeal Master Mix
2 eggs, beaten
1C water
Combine eggs and water. Pour 1/2 liquid over Mix and stir to blend. Add rest of liquid and beat until smooth. Pour into well-greased 8 X 8 inch pan or a 10 inch iron skillet. Bake in 400F oven for 20-25 minutes. Makes about 8 servings.

Harvest Corn Squares Add 2 Tbsp. sugar and 3/4 C diced apples to mix.
Onion-Cheese Cornbread Add 1/3C chopped onion and 1/2C shredded Cheddar cheese to mix.


Hush Puppies
2C Cornmeal Master Mix
1 Egg
1/3C water
2 Tbsp. grated onion
In Mixing bowl beat egg and add water, onions and Cornmeal Mix. Stir with a wooden spoon until ingredients are blended.
Shape into small balls and fry in deep fat until brown. Makes about 24 hush puppies.

Ooops forgot a couple.

Again I can not take credit for these mixes as much as I would like to they are also from another board.

TAMA-TOE, I wanted to let you know I made this the other day and it was great! I used some for a tamale pie and it turned out just like the boxed corn muffin mix. Thanks again.
