Ok, I have a question for all the expert cooks on here. We had tacos for supper tonight, but we have plenty of leftover taco meat. What kind of meals/dishes could I make with the leftover meat? Thanks!

I love to make taco salad.
Lettuce, the taco meat, tomatoes, blk olives, cheese, salsa, sour cream and some tortilla chips and catalina dressing if I have it. If I don't have the dressing I just add extra salsa.
I'm always glad if there is leftover taco meat since I almost always have the rest of the ingredients on hand. Do like to heat up the taco meat a tad, really brings out the flavors.;) Great for lunch!

Catalina dressing is a sweet reddish-orange colored salad dressing. You can also use Thousand Island dressing if you can't find Catalina.

I will probably use the Thousand Island's in it then since I already have plenty of it on hand! Thanks!

You can also roll the leftover meat in tortillas along with come cheese and pour a jar of enchilada sauce on it. Bake at 350 for about an hour. Yummm!

French dressing can be a good substitute too. I usually just use extra taco sauce or salsa. I love 'em both.:)

Last week I made spaghetti out of left over sloppy joe meat, so taco meat would work for that too.

But if it were me, I'd just have tacos again, can't have too much of a good thing if you ask me.:toothy:

I have a craving for a big taco salad with hot salsa right about now, Thanks ladies. I think I know what I will pick up for supper when I get off work tomorrow evening, besides DH can always go for mexican food....lol

I make enchilada hotdish:

Mix your taco meat with a can of spicy chili beans. Layer in a large casserole flour tortilla, meat mixture, then chedder cheese. I usually make about 3 layers of this ending with a flour tortilla. Then pour an 8 oz jar of tomato sauce and top with more chedder. Bake at 350 for 1/2 hour - YUM!!

I suppose you could freeze the leftovers for tacos another day. I usually put mine in spaghetti sauce.

I either make a taco salad or else I spread the leftover meat over nacho chips, add cheese and other taco fixings, and broil a few minutes to melt the cheese. That makes a great snack or even a meal, especially while watching movies!
