KathiS 05-15-2002, 04:20 AM Thanks everyone! Lots of good information. I used to take the kids berry picking each summer. We made wildberry jam every year. Haven't done jelly making or canning is several years. This may be the year to do some canning again.

Southernmama 07-01-2007, 11:33 PM Wonderful!! Thanks for all the helpful links. Now just need to research and find a decently priced starter kit.
hippytreehugger4ever 04-26-2008, 05:49 AM All of these sites are great--thanks for posting them. I am going to try my hand at canning this year. I am making a list now of the supplies that I will need. I am thinking of making a few jams, pickles, and preserving some tomatoes. :) I can't wait for spring and summer!
For those you'll need a water bath canner with a rack, canning jars, the tongs for lifting the jars out, a canning funnel, ladle, hot pads, lots of aprons and dishtowels LOL, screw top lids and the caps that fit inside them, sugar and pectin for jam or jelly, probably alum for pickles, and some paring knives for the tomatoes :congrats:
I just wanted to let everyone know that some of the recipes that you will find online do not meet the FDA regulations for canning. I went looking and one of the recipes called for corn starch. It isn't safe. I don't know why but they say you can't. So I guess what I am saying is just be careful. I would hate to see someone get sick cause something wasn't processed the way it should be.
