Made chicken casserole today (first thing in the slow cooker :) ) and rice.
(AND a butterscotch tart - but that's another story.)
I have some chicken and rice left over but nowhere near enough for another dinner, I don't want to throw it out though.
What can I do with it now?

Hmmm you could add some spices and more rice and make burritios out of it. My guys love almost anything in a tortilla!

You could also make soup. I would put the chicken in some water and let it simmer for awhile. Then add a bit of uncooked rice, and a few veggies. Once those are finished cooking, I'd add a can of tomatoes and the cooked rice (that was left over) and you have homemade soup.

I ditto the soup thing, it's warm and filling.
If you are scared of making your own, then a packet of that japanese noodle soup Ichiban is one brand, or else some tinned soup is a good start.
Add your little bits and bobs of leftover veggies or that last bit of green onion with the leftover rice and chicken all diced up.
In fact my kids loved that japanese dried noodle soup thing for leftovers. Make the soup per instructions and add finely chopped bits and bobs.

How about throwing in some sauted onions and cooking some brocoli, pour a can of cream of chicken soup over it....voila`! Chicken n Rice Casserole!

Bev, I think the ladies have all given you great ideas. I am so proud of you and this cooking thing. I knew you could do it.
As for the leftovers, I would add to them with whatever veggies, etc. I had on hand and then maybe put a bisquit crust and make a chicken and rice pot pie. Chicken and rice are good things to have leftover. They can be mixed with just about anything.

I use nearly anything as omelette filling. Add some cheese and a bit of veggies and give it a shot. You could also make a fritatta, which is essentially an open faced omelette. How about a souffle? It is a bit tougher, but it woudl still be edible if it fell. Maybe crepes? They are just thin pancakes with stuff rolled up in them.
