I have recently started making extra dishes for the freezer. For example: made four meatloafs....served one for dinner and freezed and labeled the other three for the freezer.
Pulled out the cookbook from www.30daygourmet.com and prepared several of their recipes.
Does anyone have any good recipes that freezer well and are kid approved?
The following two are winners at our house:
Mushroom and Cheese Chicken
(serves 6)
3 to 4 pounds of chicken cut up in to pieces (boneless or on the bone) I usually use chicken thighs or boneless breast pieces
2 cans of cream of mushroom soup
1 cup of sharp cheddar cheese
In a bowl combine the cheese and soup. Place the chicken in an 9 x 13 pan and pour the mixture over the chicken. Bake in the oven at 350 degree oven for one hour. Serve with rice. The sauce tastes wonderful as a sauce to the rice.
I have prepared batches of this and frozen it, uncooked with very good sucess. Thaw it in the refrigerator over night. I have also placed it in the crockpot with sucess. The sauce is thicker when it is cooked in the oven.
Sweet and Sour Meatballs
(serves 6)
2 lbs. of lean ground beef
l cup of bread crumbs
1/2 cup of condensed milk or regular milk is fine
dash of pepper
Combine and form into small meatballs about the size of a walnut. Place in an oblong pan.
In a saucepan combine:
1 bottle of chili sauce (found on the ketchup isle for around $1.39 a bottle)
1/2 cup of grape jelly or jam
Warm up over low heat until jelly melts and combines with the chili sauce. If you are going to cook this now you can pour them over the meatballs and then place them in a the oven at 350 degrees for 45 minutes to an hour. The sauce will bubble and the meatballs will look done. The time is dependant on how large your meatballs are.
If you are going to put these in the freezer allow the sauce to cool then pour over the meatballs. Cover the pan with foil and most importantly.....label with what it is and how to cook it!....or you will have mystery night!....happens here frequently because I think....oh I will remember what is in this dish.
