I usually make enchiladas with leftover roast, but I'm not in the mood. Last time I did BBQ dh didn't eat it. Any other ideas?

Cut the meat into strips, like you were going to stir fry. NOW Take an onion or two, large--chopped and some olive oil or butter and gently fry up the onion in a biggish fry pan or the bottom of a soup pot with a nice heavy base, you don't want it to stick and burn. Take about 2 to 3 TBSP of curry powder depending on the amount of meat and how hot you like your curry and fry gently with the onion. Frying curry powder releases the flavour to its full extent. Next slip the meat in, and sort of stir fry it till heated. Now add some sliced celery and an apple all diced (curry is best if a bit of fruit is in) and a handful of raisins and pour a little lemon juice-- a couple TBSP, some water or broth if you have it but not much, only enough to make a bit of thick sauce so about 2 to 3 TBSP, and a handful of coconut if you got it, but the coconut is optional. simmer -- it should be thick, so you need to stir this. Sprinkle some peanuts on top if you have, don't worry if you don't. Serve on top of cooked rice to soak up the curry gravy. milach 02-20-2004, 06:34 AM I usually do encheladas too.
