I am looking for some new casserole recipes and wondering if anyone has any tried and true recipes.

Chicken Dorito Casserole


4 chicken breast

1 large bag doritos

½ tsp. cumin

1 cup chicken broth

1 can cream of mushroom soup

1 can cream of chicken soup

1 lb grated cheddar cheese

1 can green chiles


Boil chicken and shred.Line a large casserole dish with doritos.

Layer chicken and chiles,alternating with doritos,ending with doritos.

In saucepan combine soups,broth and cumin,heat and pour over casserole.Cover with cheese

Bake 15-20 mins @ 350*

Not sure if this was what you were asking for,but here's another.


Green Bean and Corn Casserole

1~14.5 oz can french style green beans
1~11 oz can white shoepeg corn
8 oz sour cream
1 can cream of mushroom soup
1 roll ritz crackers
1 small onion~chopped
1 stick butter


Drain green beans and corn.Layer in a baking dish.
In a sauce pan add cream of mushroom soup,chopped onion,
and sour cream.
Heat till all mixed.
Pour soup mixture over green beans and corn.
Crush ritz crackers on top and dot stick of butter.
Bake @ 350* for about 30 mins or till top is golden brown.

Shepherds Pie

Brown and drain one pound ground beef or turkey
Mix with one can tomato soup and one can green beans, drained
Put in casserole dish and put mashed potatoes and grated cheese on top. Bake at 350 for about 30 minutes.

My family loves this hotdish. :)

We do shepherd's pie too but use cream style corn, no soup, and onion in the ground beef.

I'll do some surfing for some and add it to this thread. They won't be tried and true, but I want to have a post to look at when I start trying these and I'll post if they were good.

Sloppy Joe Casserole

1 pound ground beef
1/2 C. sliced onions
1 15.5oz. can of sloppy joe (manwich) sandwich sauce
1 11 oz. can of veggies corn, mexicorn, green beans, kidney beans
2 6oz. can refrigerated buttermilk biscuits

Preheat oven to 375F
Brown ground beef with onions. Stir in sandwich sauce and can of veggies. Cook 2-3 minutes or until heated through.
Spoon mixture into ungreased 1-1 1/2 quart casserole dish. Seperate dough biscuits, cut in half. Arrange cut side down around the outside of hot beef mixture with the sides of biscuits touching. Bake at 375F for 15-20 minutes or until biscuits are golden.

Chicken Pasta

1/2 lb Spiral noodles
1/4 c Butter/margarine
3 tb All purpose flour
1 1/2 ts Salt
3 c Milk
3 c Shredded cheddar cheese
2 c Diced cooked chicken/turkey
3 tb Crushed cornflakes

Cook pasta according to package directions; drain.

In a large saucepan melt butter. Stir in flour andsalt. Blend in milk. Cook, stirring constantly, untilthickened and bubbly. Add cheese; stir until melted.Combine pasta, cheese sauce and chicken. Mix well.

Pour into 3 quart casserole. Top with cornflakecrumbs. Bake at 350 degrees until hot, about 30 minutes.

Skillet Sausage with Potatoes

1 Tbls. vegetable oil
3 C. diced red skin potatoes
1 C. diced onion
1 Pound Bob Evans Original Recipe Roll Sausage
1/2 tsp. dried rosemary
1/4 tsp. rubbed sage
Salt & pepper to taste
2 Tbls. chopped fresh parsley

heat oil in large skillet over medium-high heat 1 minute. Add potatoes; cook 5-10 minutes or until slightly brown, stirring occasionally. Add onion, cook until tender. Add crumbled sausage; cook until browned. Add rosemary, sage, salt & pepper; cook and stir until well blended.

Company Casserole


8 oz Pkg. noodles
1 lb Ground Beef
3 T Butter
16 oz Tomato sauce (2 16 oz. cans)
1 T Chopped green bell pepper
2 T Butter
1 c Cottage cheese
8 oz Cream cheese
1/4 c Thick sour cream
1/2 c Grated onion

Cook noodles, brown turkey in 3 T. butter, stir in tomato sauce.
Remove from heat and add other ingredients; mix well. Pour into 2
quart casserole dish and bake at 350 degrees for 30 minutes. Pour melted butter over before serving.

Ham and Cheese Potato Bake

1-24 oz. frozen hash brown potatoes
2 C. fully cooked ham
3/4 C. shredded cheddar cheese, divided
1 small onion, chopped
16 oz. sour cream
1 can condensed cheddar cheese soup
1 can cream of potato soup
1 t. pepper
1 T. parsley

Combine potatoes, ham, 1/2 C. cheese and onion. In a separate bowl combine sour cream, soups and pepper; add to potato mixture and mix well. Spread in greased 3 quart baking dish. Sprinkle with remaining cheese. Bake uncovered at 350* for 1 hour or until bubbly. Let stand about 5-10 minutes before serving.

Burrito Bake

1 cup Bisquick® baking mix
Salt & pepper -- to taste
1/3 cup Water
1 cup Salsa
1 can Refried beans -- any variety
1 cup shredded cheddar cheese -- or to taste
1 pound Ground beef


Mix Bisquick, water and refried beans together and put it in the bottom of a greased pie plate. Brown and drain seasoned ground beef; put on top of mixture in pie plate.

Add salsa and then cheese. Bake, uncovered, for 30 minutes at 350 or till golden brown.

Let it sit for about 15 min, it tends to cut more like a pie.

Serve with extra salsa, sour cream and mexican chips.

Can be made the night before and refrigerated; then put in the oven.

Arkansas Breakfast Casserole
The County Fair Cookbook - L.Stallworth/R.Kennedy

6 slices bacon -- cut in 2" pieces
1 small green pepper, cored, seeded -- chopped
2 tablespoons finely chopped onion
6 cups cubed cooked potatoes
1/2 cup shredded sharp cheddar cheese
6 eggs -- lightly beaten
salt and pepper -- to taste
In a large heavy skillet, cook the bacon over moderate heat until crisp. Remove the bacon to drain. Pour off all but 3 tablespoons of dripping.

Heat the dripping remaining in the pan till it sizzles. Add the pepper, onion and potatoes and cook, stirring gently, until the potato cubes are browned.

Sprinkle on the cheese and stir until it melts. Add the eggs and cook, stirring gently, until the eggs are set. Season with salt and pepper. Sprinkle on the crumbled bacon and serve at once.

My family favourite casserole ...

You can use any meat for this - ground beef, cubed beef, pork, lamb, chicken.

Fry the meat in olive oil until it's brown. Never skip this part as it's the way you add natural flavour to meat by caramelisation.
When the meat is brown all over, add your favourite vegies. Such as:
a chopped onion
one clove garlic
one stick celery - chopped
two carrots sliced
one tomato chopped
They are what I usually add to mine and are the classic vegies for casseroles.

Brown the vegetables and add fresh parsley, tablespoon of paprika, salt and pepper. At this point you can add any other spice you like - such as a bit of cumin, curry powder, chilli etc.

When everything is nicely browned, add about a pint of water or stock, stir it all together and put the lid on. Cook slowly on top of the stove or in the oven for 1 hour or until the meat is tender and falling apart.

Serve with mashed potatoes and green beans.

The key to success with this recipe is to brown the meat. Browning adds that delicious homecooked flavour you;re after.

This is really good!!

Pasta Crab Casserole

* 8 oz. uncooked spiral pasta
* 2 large onions, chopped
* 1/2 lb. fresh mushrooms sliced
* 1/2 cup chopped green pepper
* 2 garlic cloves, minced
* 1/2 cup butter or margarine
* 2 packages (8 oz. each) imitation crabmeat, chopped
* 1/2 cup sour cream
* 2 tsp salt
* 1 1/2 tsp. dried basil
* 1 1/2 cups shredded cheddar cheese

Cook pasta according to package directions. Meanwhile in a skillet, saute onions, ,mushrooms, green pepper, and garlic in butter until crisp-tender. Remove from the heat. Drain pasta; add to vegetable mixture. Stir in the crab, sour cream, salt and basil.

Transfer to 2 greased 8 inch square baking dishes. Sprinkle with cheese. Cover and freeze one casserole for up to 1 month. Cover and bake the second casserole at 350 for 20 minutes. uncover and bake 5 minutes longer.

To use frozen casserole, Thaw in fridge for 24 hours. Remove from fridge 30 minutes before baking. Cover and bake at 350 for 55-60 minutes or until heated through.
