I found this recipe on one of the bread Yahoo group lists. I just made them, and they are delicious.

Corn Muffins

1/2 c. butter
2/3 c. sugar
1/4 c. honey
2 eggs
1/2 tsp. salt
1 1/2 c. all purpose flour
3/4 c. yellow cornmeal
1/2 tsp. baking powder
1/2 c. milk
3/4 c. frozen yellow corn

Preheat oven to 400º. Cream together butter, sugar, honey, eggs, and salt in a large bowl. Add flour, cornmeal, and baking powder and blend thoroughly. Add milk while mixing. Add corn to mixture and combine by hand until corn is worked in. Grease a 12 cup muffin pan and fill each cup with batter. Bake 20-25 min or until muffins begin to brown on top. Makes 12 muffins.

hey! that is a good one! I made a recipe almost JUST like that for my 2nd grade 4-H project...and I won a red ribbon with it!!!
God I cant believe I still remember that !!!!

I thought they were delicious...but my dh thought that the corn kernels in the muffins were "weird", and he picked out every one :rolleyes:

I'm going to have to try this. My dh loves corn muffins with kernel corn.

Thanks Michelle! I made bean soup tonight & was going to make oatmeal bread to go with it but ended up with the recipe on the box for corn muffins. they didn't rise well & tasted just ok. This is for next time.;)

This sounds so good. I love sweet cornbread. I am going to give this a try the next time I make cornbread.
