I'd try veggies & dips anything they can dunk usually gets eaten. finger foods of all kinds, some kids just don't like to fuss with proper eating with a fork or spoon.
Good luck, I know it must be frustrating.

When I used to nanny I'd do vegies with dip like Darlene suggested and yogurt with bananas & raisins and a drop of food colouring which she could choose "do you want purple lunch? or green lunch?". she ate a lot of yogurt that year.

Fruit/yogurt smoothies might help a bit.

Melting cheese over veggies also helps, sometimes.

The dip suggestion is also great, along with smoothies. And, the color! Kids love weird looking stuff!

my son loved chicken melted with california mix (carrots, broccoli, cauliflower) and cheese.
Also, make breads or muffins with veggies or fruit, ie pumpkin, applesauce, carrot, zucchini, etc. Also, just keep trying. I read once that it takes I don't know how many times to try a food with children before they are used to the change.
Another thing you might have to do is not have his chips and cookies in the house for awhile. If it's not there, he won't be able to eat them.

A few things I try are fruit cups..slice some bananas and apples up..add a few grapes.
Will he eat graham crackers? Add some peanut butter...or use saltines and make peanut butter crackers.
My kids love chicken nuggets dipped in ketchup, chicken noodle soup, grilled cheese with tomato soup. My kids even eat salads...Katie could live off of salads.
A few others is applesauce,jello,pudding...
