Soda Bread

1/2 cup old fashioned oats
1 3/4 cups buttermilk
1/3 cup honey
2 T. vegetable oil
3 cups all-purpose flour
1/2 cup whole wheat flour
1 1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 cup dried sweetened cranberries

Preheat oven to 400 degrees. Lightly oil a large baking sheet and dust it with cornmeal. Combine the first 4 ingredients in a bowl and mix well. Add the remaining ingredients and mix together until dough forms. Let the dough rest for 3 minutes then turn onto a floured surface and knead for 30 seconds. Divide the dough in half and form each half into a football shape with the ends rounded. Put the two loaves on to baking sheet spaced well apart and cut a shallow slit down the center of each loaf. Bake for 20 minutes at 400 degrees then reduce the oven temp. to 375 degrees and bake 25 minutes longer or until the loaves are golden brown, crusty and the bottoms have a hollow sound when tapped.
