What is everyone canning, freezing, or dehydrating this year? So far, I have frozen strawberries and raspberries picked at the farm, blueberries, green beans from the garden, and chives from the garden. I have canned 24 quarts of pickles, and 14 pints of salsa so far along with strawberry jam. Once the apples are ready, we will be dehydrating some for snacks, and freezing some for pies.

Ahrens65 08-21-2002, 10:49 AM I can tomatoes for salsa, juice and whole or chopped, green beans, cucumbers for pickles and relishes, beef roasts and chicken when it goes on sale and I have no room in the freezers, green peppers, onions and carrots I dehydrate, also I do fruit roll ups and banana chips and apricots for the kids (when I get the time...LOL)
I put up grape jelly from my concord grapes last week, and my raspberries are putting on their second crop...so I will have to see what I do with those yet.

PrairieRose 08-21-2002, 12:23 PM Well so far I haven't canned or frozen anything. Today I plan to blanch and freeze some tomatoes to use later, along with lots and lots of peppers for salsa.
KathiS 08-21-2002, 06:52 PM My DH and the girls and I picked wild berries on our last camping trip. I have them in the freezer right now. The girls and I are going to make jelly with them when it cools down a bit around here.

6 qts. applesauce
2 pts. applesauce
7 qts. blueberries
24 pts. rhubarb/strawberry jame
14 pts. raspberry jam
7 pts. cucumber relish
Froze beans and peas and will be doing corn within a few days. Our garden did not produce as well has years before because of the weather.
There will be more to add to this list because I have 40 lbs. of peaches coming tomorrow, along with my tomatoes yet to do.

FROZE SOME OKRA
MADE BREAD AND BUTTER PICKLES
DILL PICKLES
TOMATO JUICE
PICKLED PEPPERS
KETCHUP
still have bbq sauce and more ketchup to go. We plant close to 2 acres so we can almost till it snows out here. As long as the crops produce we can and freeze.

We don't have a garden :( , what I do all comes from my aunt :) except of course the blackberries...those grow wild :)
Maybe next year dh and I will plant our own garden :)
mustang80 06-26-2003, 08:49 AM I haven't done anything this year but I would love to! It's too hot to go pick strawberries, but I should get some anyway and make jam.
I will make applesauce in the fall when the apples come in. I love homemade applesauce. I usually store it in the freezer.
I'll check the U-Pick farm down the road to see what DD's and I can pick. It's fun to pick our own stuff.
I also love to pick peas, but I think I missed the "window". They are usually in when the strawberries are.
Tater 06-28-2003, 07:36 PM I haven't done anything so far. I've been too preoccupied with the cancer diagnosis, biopsies, etc. We didn't even plant a garden!!! :(
We do have a lot of blackberries at the lower end of our property so I may make some blackberry jelly. When my grandfather's garden starts producing, I'm sure I'll freeze peas, green beans and corn. I'm gonna be stuck off my feet for a couple of weeks anyway after my surgery, so I might as well shell peas and beans!!:)
Julie 06-30-2003, 06:56 PM I have a VERY GENEROUS aunt in Sacramento, CA who sent me 24 lbs. of apricots as an early Christmas present. She also has a lemon tree in the back yard which produces GORGEOUS lemons, not the little hard rocks you get at the store, the kind that are strip-mined in Central America, but REAL LEMONS!!!!
Here is what I made with ALL THOSE APRICOTS and a wee bit of lemon juice, sugar, and pineapple ---- apricot-pineapple jam as follows:
25 half-pint jars
2 12 ounce jars
4 pint jars
This is my stash for the year -- sure don't know if I have the energy to do it all next year!! Famous last words!
The dregs of the jam pot contained enough jam to fill 2 half-pint jars and about 6 ounces of another jar. I did not process any of this tiny bit, but one felt like it did seal. I gave one of these last jars to a co-worker who is originally from California and appreciates this sort of thing.
Planning to put up some:
** Sweet chili sauce
** Pickles (hopefully -- gotta learn how to do it first!!)
** Wanna buy a pressure cooker so I can put up stuff like chicken a la king, chili, etc. that you can only do with a pressure cooker.
