Here you go Sara.....

Measure into a small bowl (cereal bowl)

1 c. water
2 tsp. sugar
2 tbsp. yeast

Let stand for 10 minutes, then stir well.

Place in large bowl:
1 c. milk
3 c. water

Add:
6 tbsp. butter/margarine
6 tbsp. sugar
4 tsp. salt

Add yeast mixture and mix well. Add:

4 c. flour (mix well)

Add another 4 c. flour, mixing well.
Add another 4 c. flour (total 12 c. flour)

Turn out onto lightly floured board. Knead well (10 mins.). Cover and let rise until doubled. Punch down and let rise again. Put into pans (4 pans) and let rise again. Bake for approx. 1/2 hr. at 375. (You'll be dividing the dough into 4 here).

Adjustments if freshly ground grain:

Add 4 tsp. lechitin granules with flour. Let rise 3 times before you put into bread pans. Bake at 350 for approx 1/2 hr.

NOpe they won't be found in a grocery store unless the grocery store has a section of health food items.

Lechitin granules help the dough rise. You need it when you've freshly ground the wheat. They also must be stored in the fridge.
