When baking breads or buns, wait until the dough has raised just a bit more than double. You'll have much lighter bread.
Be careful though that the dough doesn't rise too much. If it has risen too much, it will fall when you place it in the oven to bake. If your worried about it over rising or you forgot about it, punch it down well, reshape the loaves and let it rise again.
