I was shocked my kids drank this, but the end result was really tasty. I would like to try it with some yogurt instead of the breakfast shake mix.
I used one cup plain rice milk
one cup mango chunks frozen
half a banana
one scoop vanilla breakfast shake mix (a shot of vanilla could probably be substituted too but since we had this on hand, I thought it would be good for extra nutrients)
lots of ice
This recipe served all three of us.
I blended it all together and it was about the consistency of a milkshake or a little thicker. It didn't need any additional sweetener and both kids loved it. I'm always looking for easy ideas for breakfast and any way to get additional fruit into their diets. Up until yesterday my dd refused to try mango (which was cheaper frozen than fresh I found) and now she's a fan:)
