This is dh's favorite relish. I don't like beets, he loves them.

BEET RELISH

1 qt. chopped beets
1 qt. chopped cabbage
1 c. grated horseradish
1 tsp. salt
2 c. vinegar
2 c. sugar

Chop beets and cabbage. Combine first 4 ingredients. Scald vinegar; add and dissolve
sugar. Add to vegetable mixture. Heat together and cook until vegetables are clear. Place in sterilized jars and seal.
