FRESH TOMATO SOUP

2 tbsp. butter
1 med. onion, chopped
1 clove garlic, chopped
1 carrot, chopped
1 stalk celery with leaves, chopped
3-4 c. chopped tomatoes
1 tbsp. whole wheat flour
3 c. water
1 tbsp. fresh basil or 1 tsp. dry
1 tsp. salt
1 tsp. tomato paste (if soup is made from winter tomatoes)

Melt 1 tbsp. butter in 2-3 qt. pot. Add onion, garlic, carrot and celery and saute for 5 mins. until onion in transparent. Add tomatoes and simmer for 10 minutes, mashing occasionally with a wooden spoon until soft and pulpy. Sprinkle flour over tomatoes and stir smooth. Add water and seasonings, bring to a boil and simmer, uncovered, for 20 minutes if soup is to be pureed, 30 if not. Puree if desired in food mill or in the blender or processor.

Oh that sounds so good, I have a ton of tomatoes,HM soup is such a comfort food for my family....

I made HM tomatoe soup last winter, was disapointed the family didn't really like it. But I did.
Its hard for them to get use to some textures that they are use to a different for certain foods.
