My aunts favorite soup.

MINESTRONE

1 clove garlic, chopped
1 tbsp. oil
1/2 c. chopped onion
6 c. tomato broth (liquid from drained canned tomatoes, an equal dilution of tomato juice and water
2 carrots, diced
1 stalk celery, diced
1/2 lb. potatoes, diced
1 tsp. salt
1 tbsp. chopped parsley
1 tbsp. fresh or 1 tsp. dried basil
1 sm. zucchini, diced
1/2 c. whole wheat elbow macaroni, small shells or broken spaghetti
1 c. cooked beans
2 1/2 c. shredded greens (spinach, romaine, charde, chicory, etc.)
grated Parmesan cheese

Saute garlic briefly in oil. Add oion and cook until softened. Add tomato broth, carrots, celery, potatoes, salt and remaining seasonings. Bring to a boil, cover and simmer 20 mins. Add remaining ingredients, cover and simmer 20-30 mins. longer or until vegetables are quite tender

Perfect! I am looking for a completely vegetarian (chicken broth? no!) minestrone recipe for my dinner club dinner. I might just use this :)

I absoultely love mineistrone soup and I can't wait to try out your recipie. It sounds absoulutley delicious. Thank you for posting it.
