    Default Does anyone havea recipe for cranberry muffins

    .. i would like to make some really nice muffins, and was hoping someone knew i great recipe. thanks in advance

    If you make a basic muffin batter and add the crandberries then put a coffee cake topping on them.
    Coffee Cake Muffins
    Bake at 350 for 20 min makes 12

    1 1/2 cups flour + 1/2 cup of dried or fresh crandberries
    1/2 cup sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/4 cup oil
    1 egg
    1/2 cup milk Mix and put in pans 1/2 full TOPPING: 1/4 cup brown sugar,1/4 cup nuts, 1 tablespoon flour, 1 teaspoon cinnimon, 1 tablespoon melted butter. Mix together and put some on top of each muffin. Enjoy!

    Simple muffin recipe (very hearty)

    1 cup whole wheat flour (or any whole or integral flour)
    1/2 cup wheat bran
    1/2 cup oats
    2 1/2 tsp baking powder
    1/4 cup brown sugar
    1 to 2 cups of additions (cranberries or other fruits, fresh or dried, nuts, chocolate chips, etc)
    a small dash of vanilla
    5 tbsp melted butter
    3/4 to 1 1/4 cup milk

    preheat oven to 350F
    makes 8 muffins

    mix the dry ingredients and add fruits, nuts, vanilla, butter and 3/4 cup of milk and set aside for a minut to let the moisture through.

    add milk if needed; the batter should look slightly wetter than its traditional counterpart, and move smoothly and freely over the spoon as you mix but should not be runny. A batter that is not moist enough will have a tendency to be clumpy with little free-flowing movement as you stir.

    spoon the batter into muffin tin and bake for 35-40 minutes or until golden. wait 5 minutes before removing from the pan.

    *you can subsidize a part of the flour, bran or oats for some wheat germs or ground flaxseeds.
