This recipe is from Fleischmann's Yeast Bread Machine cookbook and is our favorite pizza dough. It reminds me of Freschetta PizzaAmore dough. Makes 1lb for 1 12" pizza.
2/3 c. Water
4 tsp Olive or vegetable oil
1/2 tsp salt
2 c. bread flour
1 1/2 tsp FLEISCHMANN'S Bread machine Yeast
1 Tbsp. Cornmeal
Add in water, oil, salt, bread flour, and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle. When cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in sufficient flour to make dough easy to handle. For each pizza, grease pan and sprinkle with cornmeal, pat or roll dough into pan. Add toppings and bake 425º for15-25 min.~*Darlene*~

Here's one...DH thinks it's wonderful and he's pretty hard to please. It's super easy too.
2 1/2 cups flour (I use whole wheat)
2 tsp. baking powder
1 tsp. salt
1 tsp. dry yeast
3/4 cup water
1/4 oil (I use olive oil)
Mix the dry ingredients. Add water and oil. You might need to add a spoon or two more of water if too dry. Mix until dough forms a big ball in the bowl. It should be a similar to biscuit dough. Knead about 10-12 times and then form into a ball. Place the ball in center of pizza pan and press dough into pan.
Top with your favorite ingredients and bake for 15-20 minutes at 400F (200C).

Frozen Homemade Pizza Dough...
I have a breadmachine but for whatever reason I just can't seem to make a decent loaf of bread with it so I'm going to pizza dough will be no different for me LOL! Sooo I'm looking for any and all tried and true pizza dough recipes that will work with my KA mixer and freeze well.
This is one recipe I have but I have not made it yet.
Homemade Pizza Recipe
(Makes enough dough for two 10-12 inch pizzas)
-1 1/2 cups warm water (105°F-115°F)
-1 package (2 1/4 teaspoons) of active dry yeast
-3 1/2 cups bread flour (can use all-purpose but bread flour will give you a crisper crust)
-2 Tbsp olive oil
-2 teaspoons salt
-1 teaspoon sugar
Making the Pizza Dough
1. In the large bowl of a heavy duty electric mixer (such as a Kitchen Aid), add the warm water. Sprinkle on the yeast and let sit for 5 minutes until the yeast is dissolved. Stir to dissolve completely if needed at the end of 5 minutes.
2. Attach a mixing paddle to the mixer. Mix in the olive oil, flour, salt and sugar on low speed for about a minute. Remove the mixing paddle and replace with a dough hook. Knead using the mixer and dough hook, on low to medium speed, until the dough is smooth and elastic, about 10 minutes. If you don't have a mixer, you can mix and knead by hand. If the dough seems a little too wet, sprinkle on a bit more flour.

3. Place ball of dough in a bowl that has been coated lightly with olive oil. Turn the dough around in the bowl so that it gets coated with the oil. Cover with plastic wrap. Let sit in a warm place (75-85°F) until it doubles in size, about 1 to 1 1/2 hours (or several hours longer, a longer rise will improve the flavor). If you don't have a warm spot in the house you can heat the oven to 150 degrees, and then turn off the oven. Let the oven cool till it is just a little warm, then place the bowl of dough in this warmed oven to rise.


**At this point, if you want to make ahead, you can freeze the dough in an airtight container for up to two weeks. Thaw overnight in fridge.

The one thing that I don't like about this recipe is that it's freezer life seems VERY short (2 wks) to me!

This is my breadmachine pizza dough recipe. I make it in my Kitchen aid mixer now and put it in a big bowl to rise.
Put ingredients in bread machine in this order:
1 cup water heating for 1 min in the microwave
2 TBSP oil
1 tsp salt
3 cups flour
2 tsp yeast
Set it on the dough setting. When it is finished, oil a pan and your hands. Dump the dough into the pan and pat out. It makes one thick dough or two thin doughs. Bake at 400F for 7 minutes. Add your toppings and bake for another 7 minutes.
Side note:
You can use any oil. I use whatever I have on hand.
I have used 100% whole wheat and I have used all purpose flour. I have also used a mix of the two. It comes out the same no matter which you use.
If you make streusal and put it on the pizza dough and bake, it makes a nummy dessert or a good "junk" (ie, no real nutritional value) breakfast pizza.
You can also top the dough with applesauce and then streusal and bake. It makes a yummy dessert that is good for taking to pot lucks.Beak-1996, Toad-1998, and Q-1998

I find that most doughs can be frozen for up to about a month. After that you run the risk of the yeast not activating adequately, although if you wait long enough, it should rise.
I freeze dough in flat disks - not in balls - that helps it thaw more quickly. Wrap very well and be sure that there is no air trapped within the wrapping. This is what causes freezer burn.
What is it that is not working for you with the bread machine? I don't bake much in mine, I mainly use it to make doughs - that's just because I mainly make rolls for sandwiches, or I want to make a baguette or something else, but not a normal loaf shape. But I do bake in it from time to time. Anyway, I'll be glad to help you out, if you like.

I also have a question about this. If I make the dough and put it in the pizza pan and freeze it then do I have to thaw it out when I want to make pizza or can I just add toppings and bake like I would a store bought pizza?

I prebake my dough because it doesn't get baked all the way when we top it and then bake it. I freeze our dough in large (64 oz) plastic bowls. I pull it out, let it thaw and warm up and rise a little, then use it like regular dough.
Oh yeah, side note: I grease the bowls before I toss extra dough in the fridge or the freezer.
And another side note: Streusal topping is a cup of butter, a cup of flour, and a cup of sugar (we use brown sugar). You cut the butter into the flour and sugar. We store it the extra in a small container in the freezer.Beak-1996, Toad-1998, and Q-1998
