    Default Oatmeal only bread???

    My little guy cant handle wheat, and all that I have in the house is oatmeal. Is there a way that I can make bread without adding flours of any kind? All the ones I find online have rice, or wheat flours in them. All I have to use is the usual for making breads. Lemon juice, yeast, salt, white sugar, honey, molassis, oil, eggs.
    I tried to grind up the oats and make breat with the "flour" I got from it, but it absorbed all the water and did not work right. So I was thinking of just making to oatmeal first, and then making bread with the cooked oatmeal?? Any ideas would be great. He is not yet 1 year old, so he is not too picky.

    My dd said something about little ones are not to have honey? I don't know if this would include in baking also. Someone else please chime in here.

    I wish I knew the answer to your original questions.

    Have you tried making a batter with oat flour and making an unsweetened "pancake" as a substitute?

    Poor Man's Bread - - Super Cheap! Has a basic recipe of flour, water, and baking powder. I would try substituting oat flour, adding an egg and extra water to make it pourable like a pancake batter. Then tweak the recipe if it looks like it will work.

    Not sure about all oatmeal, I usually do half and half when baking bread, but what the PP said about honey is correct. There is something in honey that babies cannot process, it can cause botulism. Honey is not recommended for children under the age of 2.

    yes honey is not an option for him yet even in baking, but he will be ayear old soon and it will be fine then, i can just use sugar for now. i would like something that i can bake for him ahead of time. i do make poor man bread for him on pancake night/mornings, but I would like something that I could bake in the oven. I am pregnant and standing over the stove is hard work for me right now. Maybe something like a cookie (with no sugar) or a muffin would work?

    Have you tried making a pancake in the oven? When camping with a friend we took our left over pancake batter and baked it in a pot over the coals with the lid on. It came out very similar to bread. I think the 1 inch of batter became about a 2 inch high product.

    You could also use agave nectar as a honey substitute, it's safer for little ones.

    Here is the recipe professional bakers use to create a gluten effect in gluten-free flour: 2 cups oat flour 1/3 cup tapioca flour 2/3 cups potato starch 1 to 2 tsp. of xanthan gum

    This recipe uses only oat flour, no other kind of flour, but you do need guar gum for it, Gluten Free Oatmeal Bread Recipe - Food.com - 385281

    A friend who is gluten free makes little like pancakes with "alternative flour" (not for sure exactly what she uses in them). She makes the pancakes about bun-size. Her sandwiches look like she made them with those thin little buns that they have out now.
