Savory Cheese Muffins
2 c. unbleached flour
3 tbs. grated Parmesan
3 tbs. grated Romano
2 tsp. baking powder
3/4 tsp. dill weed
Pinch salt
1/8 tsp. garlic powder
1 c. milk
1/4 c. vegetable oil
1 egg, beaten
Preheat oven to 400º. I
n a bowl, combine flour, cheeses, baking powder, dill weed, salt, and garlic powder.
Make a hole in the middle and add milk, oil, and egg.
Stir just til dry ingredients are moistened. Spoon batter into baking cups, filling 3/4 full.
Bake 18-20 min. or til golden brown. If desired, during last 3 min. top each muffin with teaspoon of grated cheddar.
Makes 20 muffins

These are great especially with Chili or Spaghetti. I really think they make a good addition to a Mexican meal too. I hope you enjoy them.

Do they freeze well? It's only hubby and I and even if I half the recipe it's still too many for us.~~ Dee ~~
