    Default Coffee Tins Quick Breads- Autumn Gift Idea

    Coffee Tins Quick Breads

    3 c. sugar
    4 eggs
    1 c. vegetable oil
    2/3 c. water
    2 c. applesauce, pumpkin or bananas
    3 1/2 c. flour
    2 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 c. nuts, chopped
    1 c. dates, chopped

    Combine sugar, eggs, oil, water and applesauce. Sift together flour,
    soda, salt, cinnamon and nutmeg. Add remaining ingredients. Stir until
    well blended. Grease and flour three 1 pound coffee cans. Pour batter
    into cans filling 3/4 full. Bake at 350 degrees for 1 hour. Cool for 10
    minutes. Remove from cans. Replace when completely cool. Yields 3 loaves.

    After I try CJ's apple butter pumpkin pie, I'm going to try this recipe. Gosh I'm going to be busy, but won't my kitchen smell good? Thanks for posting it!

    I need to try this! I've been saving coffee cans for just such an occasion Anyone know if you can substitute something else for the dates & nuts? Not sure those would go over too well at my house.
