    Thumbs up Quick Raisin Loaf

    Quick Raisin Loaf

    2 eggs
    1 cup sugar
    1/2 cup vegetable oil
    1 teaspoon vanilla extract
    1-1/2 cup all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/8 teaspeen salt
    2 teaspoon cinnamon
    1 cup raisins (soak in water, then dust with flour-raisins won't sink to bottom of pan)
    Optional 1/2 cup choppedwalnuts


    Preheat oven 350F
    Grease a 9x5-inch loaf pan.
    Combine all ingredients in large bowl. Mix and pour into greased pan.
    Bake 50 to 60 minutes. Allow to cool before cutting

    ohhh...that sounds yummy and I can use of the raisins the boys had to have but won't eat.

    How long do you soak the raisins? Also, is the akin to the cinnamon raisin bread we'd find in the stores? I love cinnamon raisin bread even though I'm not much of a raisin fan.

    I have to try this. All 3 of us like raisins..

    My middle brother wouldn't eat raisins but the dr wanted him to , so my mother would put them way up in the cupboard and tell him not to touch them. It worked because she'd watch him look around and see if she was there . If not he was to the cupboard and in to them every time.
    When he was small he was a corker.. LOL. ( He's 62 in July )

    I soak the raisins until they plump up (10 to 15 mins), then they don't sink to the bottom of the pan. Also, to me it is more dense and has more texture than store bread.
